  • BLUEBERRY MUFFIN SMOOTHIE BOWLL😎😎 blueberries are one of my favorite fruits because they are loaded with many great antioxidants that will keep you looking goodd and they taste amazing. I try to eat at least half a cup of them everyday! 
1 large frozen banana
3/4 cup frozen blueberries 
1/2 tsp vanilla extract
1 scoop protein powder 
3-5 ice cubes
1 tsp almond butter
1 tbs Greek yogurt or any thick dairy free yogurt
Enough almond milk to blend

  • after many unsuccessful attempts to make cinnamon rolls during quarantine, i’m proud to say i FINALLY did it!!! look at these mini CHOCOLATE CINNAMON ROLLS😍🍫🤪 there’s absolutely no way you can mess up this @healthwithvictoria recipe bc it’s that easy! these are vegan, gluten free, refined sugar free, and so addictive! yes they’re messy, but doesn’t that mean they taste even better?! RECIPE VIA @healthwithvictoria 🤩
1 cup flour (all purpose or gf flour will work)
1 tsp baking powder
1 cup unsweetened greek yogurt 
filling: sprinkle cinnamon and drizzle melted @hukitchen chocolate- also added monkfruit sweetener!

directions: preheat oven to 350. grease a small baking dish and set aside. combine flour, baking powder, and yogurt and mix until a dough forms. the recipe makes 4-6 large cinnamon rolls (but I made minis)! separate dough into the desired amount of rolls you want. take each ball and roll into a log, making sure to dust with flour so it isn’t sticky. flatten each log and and spread cinnamon sugar & chocolate mixture. next, slowly roll it into a cinnamon roll and place in baking dish. once you make all the rolls, brush with coconut oil for a golden brown finish! bake for 18-20 minutes. top with more hi chocolate, or icing (I used swerve confectioners sugar, almond milk, cinnamon). ENJOY😍

mushroom stir-fry (serves 2-3)
-2 tbsp cooking oil
-1 tbsp ginger, minced
-3 cloves garlic, minced
-2 dried red chilis; omit for less heat
-1 cup chopped vegetables, such as carrots, snap peas, cauliflower
-8 oz (225g) mushrooms, sliced or whole
-1/2 pack (200g) tofu, tempeh, seitan, beans, or protein of your choice
SAUCE
-2 tbsp soy sauce + 1 tbsp hoisin sauce, or use 3 tbsp soy sauce
-1 tbsp raw sugar, or to taste
-1-2 tbsp sriracha
-1 tbsp sesame oil
-1 tbsp rice vinegar
-4 tbsp vegetable broth
-1 tbsp cornstarch + 2 tbsp water 
In a bowl, combine the sauce ingredients. If needed, slice the tofu (or other protein) into your desired size & shape. (***For more crispiness, coat in cornstarch before cooking.) Heat some oil in a large pan and add the ginger, garlic, and chili. After 3 minutes, add in the tofu and fry until golden, about 8 minutes. Transfer to a bowl and set aside, reserving oil in the pan. To the pan, add in vegetables and mushrooms. Once mushrooms have caramelized, add in tofu with the sauce mixture and coat evenly. Simmer for 5-10 more minutes, or until the sauce has thickened, then serve warm.
