  • Waking up to these amazing bars! 
These are breakfast/snack bars 
They're very easy and simple to make.
Mix 50 g of oats, sugar and oats flour (powdered oats) and mix this into melted butter . Use sugar of your choice. I used a mix of cane sugar and light brown sugar and also added some flax seeds ..you are free to add nuts and seeds of your choice. Mix everything and bake them for 15 minutes at 180 C and they're ready to eat ! Store them up in the refrigerator and they'll stay good for 5 to 7 days.

  • Overnight oats is one of my favorite summer breakfasts. Overnight oats can be made with your favorite fruit and milk of choice. Mix everything and let it sit in the fridge overnight. In the morning, you have a pudding like porridge that is perfect for easy grab and go breakfasts.  Banana apple overnight oats

1/4 cup chopped apple
1/2 cup banana
1/2 cup rolled oats
1/2 cup almond milk
2 tbsp chia seeds
1 tbsp maple syrup
1/2 tsp vanilla

Mix together and place it in the fridge overnight. Top with chopped apples, banana and sprinkle cocoa powder.

  • No words can describe the immense happiness! Tears almost falling... Hahaha so dramatic like korean drama .. but seriously.. I'm thrilled.. 😅

I've spend alot of time reading and watching videos and practicing with hand movements on the folding methods and talking on my own.. 🤭

This rustic bread is lightly sweetened with honey and it's absolutely a healthier choice. 
Rustic Honey Oat Sourdough
100g wholemeal flour
200g bread flour
50g rolled oats @scoopwholefoods_sg 
280g water
2 tbsp liquid honey
1 tsp salt
140g starter

8am feed the starter
1-3pm Autolyse
3-7pm supposingly 6 sets of coil fold, but I've added in stretch and fold. I would consider this a high hydration dough too.
7-10pm bulk fermentation & lamination
10 hours of cold retard

Baked at 8am the next morning with preheated oven at 230°C. baked at 18mins lid on and 20mins without lid.

It's quite a time consuming loaf and I will have to keep practicing and get use to it.

Mistakes made: -adding the honey at the wrong stage
-squeezing the dough into Dutch oven which is smaller than the dough😑  and didn't have space to expand a single bit.. glad it turn out well.. if not I would really cry

Recipe adapted from homegrownhappinessnz which I followed closely.

  • Easy tomato soup and grilled cheese croutons from Barefoot Contessa Foolproof by @inagarten. 
I reassure you right now that I didn’t make soup for supper! Remember when I was complaining about the snow 2 weeks ago? Well today we hit 34C/93F🥵!!! We enjoyed this soup last week when it was cooler, and it surpassed my expectations. The homemade chicken stock definitely made a difference and the orzo, I used stellini, gave it a great thick texture especially the next day (1st photo). The cheesy croutons are as yummy as they look and some freshly picked basil finished the dish off perfectly.

  • Mushroom zucchini toast with fried sage by @veganreset 💚 #ToastTuesday

For 4 small or 2 large toasts, simply sauté 8oz of sliced baby Bella mushrooms (brush the mushrooms if need be, but don’t wash them with water), 2 sliced garlic cloves and 1/2 small thinly sliced zucchini in 1 tbsp olive oil over medium heat for 10 minutes. (Optional: add 1/2 tsp liquid smoke if you want to add a little smoky flavor). Add ground pepper and sea salt to taste while cooking and add a little more olive oil if need be. For the fried sage, add olive oil to a separate small pan or pot (just enough to fully cover the sage), heat over medium to high heat and once hot, add 1/2 handful of fresh sage to the oil and fry for just about 10 seconds or until crispy but still green. Remove from the oil using kitchen tongs and remove any excess oil with a kitchen towel. Serve the mushrooms and zucchini on top of sliced bread (optionally toast the bread before) and top with the fried sage. Enjoy! #bestofvegan

  • long time no post! 👋🏻 if you have not muted my stories by now (haha, i know i post a lot some days,) you would know i am still only eating in cars, at home, or on my way home from a stroll. these spots and takeout boxes leave something to be desired in terms of photography. so of course, boy, was i glad to have the opportunity to snap some decent photos of @ramentakeuma in the open air! 🍜⁣

nothing quite surpasses in feeling the act of eating high quality ramen right before a storm! ⛈ we were sat on a hidden patio with only the tempestuous rustle of trees to distract us. ⁣
⁣
but not much could distract from how mouthwateringly delicious this ramen was! if i had to summarize it, i would opt for the word 'melty.' albeit plated with masterful acknowledgment of each individual component, the dining experience was reduced simply to a soupy haze of well-paired flavors.⁣

  • long time no post! 👋🏻 if you have not muted my stories by now (haha, i know i post a lot some days,) you would know i am still only eating in cars, at home, or on my way home from a stroll. these spots and takeout boxes leave something to be desired in terms of photography. so of course, boy, was i glad to have the opportunity to snap some decent photos of @ramentakeuma in the open air! 🍜⁣

    nothing quite surpasses in feeling the act of eating high quality ramen right before a storm! ⛈ we were sat on a hidden patio with only the tempestuous rustle of trees to distract us. ⁣

    but not much could distract from how mouthwateringly delicious this ramen was! if i had to summarize it, i would opt for the word 'melty.' albeit plated with masterful acknowledgment of each individual component, the dining experience was reduced simply to a soupy haze of well-paired flavors.⁣

  • GARLIC ROASTED TOMATO CHICKPEA PASTA by @alexafuelednaturally ❤️ (Note: this recipe was developed and photographed by @alexafuelednaturally. Please make sure you follow her page & blog for even more delicious recipes;)) .

1/2 lb of pasta (I used spaghetti) 
4 garlic cloves, minced 
2 1/2 tbsp vegan butter 
1/4 white onion , thinly sliced 
1 container cherry tomatoes 
1 Can chickpeas (drained & rinsed) 
Salt
Pepper
1 tbsp herbs de Provence 
1 tsp garlic powder 
Small handful fresh herbs (I used cilantro) 
Olive oil 
3 tbsp nutritional yeast (optional) 
Flakey sea salt 
1. Preheat oven to 400°F. On a baking sheet add the tomatoes and chickpeas. Drizzle over olive oil then season with salt, pepper, herbs de Provence, garlic powder. Bake in oven for 22 minutes then bump up heat to 475 and bake for an additional 7-10 minutes. Until charred. 
2. Meanwhile cook pasta. While pasta is cooking add 2 1/2 tbsp vegan butter to a pan and sauté minced garlic and thinly sliced onions...for 4-6 minutes on low heat. Once pasta is done add directly to the pan with the onions and garlic... I added a couple tbsp of the hot pasta water too. I then add nutritional yeast, a drizzle of olive oil (about 2 tbsp) pepper and salt to taste, and chopped fresh herbs. Toss then once tomatoes and chickpeas are out of the oven add to pasta, toss again then serve hot! I like to add more fresh herbs and add a sprinkle of flakey sea salt. #bestofvegan

  • Golden Milk. Напиток для прохладной погоды, снимала я его на прошлой неделе, самое время было))).
Рецепт. Берём молоко. Можно обычное, можно кокосовое, миндальное или любое другое. На кружку 1/4 чайной ложки куркумы, столько же молотого имбиря. При желании можно добавить молотый чёрный перец, на кончике ложки. Смешиваем приправы, добавляем чайную ложку горячей воды и тщательно размешиваем. Вливаем смесь в горячее молок, даём закипеть и пару минут варим на очень медленном огне. Выключаем, даём немного остыть, добавляем мёд или другой подсластитель по вкусу. Напиток богов готов к употреблению. Вполне аюрведический, очень согревающий, иммуностимулирующий и очень полезный во всех отношениях.

  • Oh. My. God. Amazing neapolitan-style pizza at home is absolutely possible. I used @bakingsteel 's 72-hr dough, homemade marinara and fresh mozzarella. I do not have a Baking Steel [yet] but I did find a @vermontcastingsbbq steel at my local @canadiantire and it definitely served its purpose here.  I also don't have a pizza peel, so I shaped on a piece of parchment, cut off excess parchment to prevent burning under the broiler, and used a lightweight, flimsy pizza pan to launch it! Retrieved pizza by pulling on the parchment with metal tongs and sliding it onto said pizza pan! Haven't perfected shaping yet, but I got dough and time aplenty.

I will never not be amazed by how much weight loss has changed my face. Like, where did that chin go??? Not only my chin but I have been asked by people in person and online about a nose job and lip injections? ya girl is stingy and not about to spend $$ on facial work. So, no. No surgery has been performed on my face, although i would love to get my eyebrows tattooed on. I’m tired of filling them in everyday 🤪

Grün-weiße Bandnudeln mit Tomate-Tofu-Pilz-Soße!
Ganz schnell gemacht:
🌱
1. Nudeln kochen 
2. eine kleine Zwiebel würfeln und andünsten, 1 Block Tofu grob würfeln und mit anbraten, Pilze nach Wahl mit anbraten
3. mit passierten Tomaten ablöschen, ein Schluck Wasser dazu und 5-10 Min köcheln lassen
4. mit Salz, Pfeffer, Zucker und Bärlauchpulver abschmecken
5. Frühlingszwiebeln und Schnittlauchblüten unterrühren 
6. frische Sprossen oben drauf
Fertig ✅

Schmeckt übrigens auch sehr lecker wenn man den Tofu durch einen Fischersatz austauscht 🌱🤤👌

1/2 lb of pasta (I used spaghetti) 
4 garlic cloves, minced 
2 1/2 tbsp vegan butter 
1/4 white onion , thinly sliced 
1 container cherry tomatoes 
1 Can chickpeas (drained & rinsed) 
Salt
Pepper
1 tbsp herbs de Provence 
1 tsp garlic powder 
Small handful fresh herbs (I used cilantro) 
Olive oil 
3 tbsp nutritional yeast (optional) 
Flakey sea salt 
1. Preheat oven to 400°F. On a baking sheet add the tomatoes and chickpeas. Drizzle over olive oil then season with salt, pepper, herbs de Provence, garlic powder. Bake in oven for 22 minutes then bump up heat to 475 and bake for an additional 7-10 minutes. Until charred. 
2. Meanwhile cook pasta. While pasta is cooking add 2 1/2 tbsp vegan butter to a pan and sauté minced garlic and thinly sliced onions...for 4-6 minutes on low heat. Once pasta is done add directly to the pan with the onions and garlic... I added a couple tbsp of the hot pasta water too. I then add nutritional yeast, a drizzle of olive oil (about 2 tbsp) pepper and salt to taste, and chopped fresh herbs. Toss then once tomatoes and chickpeas are out of the oven add to pasta, toss again then serve hot! I like to add more fresh herbs and add a sprinkle of flakey sea salt. #bestofvegan

Chop up cauliflower into small to medium sized pieces (bite size but not too tiny either). wash and pat dry and set aside.
 in a bowl put together dry spices:
1 tsp of cumin.
1 tsp of onion powder
1/2 tsp of salt
1 tsp of garlic powder.
toss florets inside and toss within the bowl to coat.
add 1 cup of coconut milk and set aside to set for 10 - 15 minutes.
afterwards, turn your oven to bake and bake on 375 for 10 minutes and then broil for 2 minutes on low.

Meanwhile
dice up 1 onion and throw into a deep pan coated with olive oil or avocado oil. Cook on medium - low.
let it caramelize (until the onions are a soft brown) and throw in: 1/2 tsp of cumin, 1/2 tsp of turmeric, 1 tsp of coriander paste, 1 tsp of ginger and garlic paste, juice of half a lemon, 1/2 tsp of salt. Keep cooking until fragrant.
 Add 1.5 cans of coconut milk (full fat) and bring pan to a boil. add 1 can of tomato paste. Keep stirring and reduce heat to medium. Keep stirring until thickened. Add more salt, pepper or lemon juice if needed.  Stir in your cooked cauliflower and gently coat them with the sauce, turning your spoon in the batter to allow the florets to absorb and coated. 
Add some coriander leaves and chilies and naan and you've got an amazing meal!

1 cup dried black turtle beans, soaked overnight
2 tbsp olive oil
1/2 yellow onion small diced
2 cloves garlic minced
2 tsp ground cumin
2 tsp smoked paprika
1/4 tsp cayenne
1/4 tsp salt and cracked pepper
5 cherry tomatoes halved
1/4 cup homemade tomato sauce
⠀
~In an instant pot, sauté onion, garlic & olive oil.  Once soft, add in spices to toast for 30 sec to 1 minute.  Add drained and rinsed beans and cover with water.  Pressure cook on high for 25 min and allow to naturally release.  If there is left over water, drain over a sieve.

NEATBALLS
⠀
1 1/2 cups cooked black beans
1 cup cooked and cooled quinoa
1/2 cup roughly chopped basil
1/2 yellow onion diced
2 cloves garlic minced
1 tsp dried oregano
1 tsp dried parsley
2 heaping tbsp vegan Parmesan
1 tsp fennel seeds
1 tbsp vegan Worcestershire sauce (or balsamic vinegar)
2 tsp tomato paste
Handful baby spinach
1/4 teaspoon cayenne
Pinch of chilli flakes
1/2 teaspoon sea salt
Cracked pepper

Preheat oven to 375F.  Place cooked black beans on parchment paper and spread evenly.  Place in pre-heated oven for 15 min.  The beans should dry out slightly but will still have moisture.  Saute garlic and onion and add to food processor.  Place everything into food processor and pulse to combine.  We are looking for texture, not puree.  If the mixture is too wet, add more vegan Parmesan OR a couple tablespoons of bread crumbs.  I didn’t find that necessary but you might.  Place parchment on a baking sheet.  Roll balls (its ok if they are very moist) and place in fridge to firm up for 20 minutes.  Heat 2 tbsp olive oil over medium high heat into same pan as garlic and onion.  Gently add neat-balls in.  Sear on all sides and place on baking sheet.  Bake for 25-30min turning half way.

  • VEGAN ”SNICKERS” STYLE ICE CREAM BARS by @feastingonfruit ❤️ 3/4 cup nut/seed butter
1/2 cup coconut flour
2 tbsp maple syrup
Nondairy ice cream of choice (salted caramel if you got it, but vanilla works too!)
1/2 cup roasted peanuts, chopped
1 cup dark chocolate chips, melted
〰️
Mix together nut/seed butter, coconut flour, and maple syrup to make the “nougat”. Press into a pan lined with vegan wax paper. Spread the ice cream on top (let it soften for 5-10 minutes first). Sprinkle peanuts on top, and press in lightly. Freeze for at least 4 hours. Working quickly, lift from the pan and slice into bars. Dip/coat the bars with melted chocolate. Re-freeze. Enjoy frozen and keep leftovers in the freezer.

This was so delicious, I am always excited to see what is in @guardianfeast every Saturday so I can plan the recipes into my week and this from @ottolenghi did not disappoint the salad was inspired by @budgetbytes and was a great little combo! -
All ingredients and method is in my highlights under garlic chicken have a watch! Only thing that isn’t in there is the dressing for the salad which was 2 TBSP of tahini, a splash of water, juice of a lemon, paprika and salt! ❤️

½ package of extra firm tofu, pressed with the water removed and cut into thin long slices. 
3 medium wraps, I used multigrain pita wraps.
¼ cup Drew's Organics Thai Coconut Sesame Dressing @drewsorganics 
½ cup red bell pepper, chopped 
1 large carrot, julienne 
¾ cup shredded cabbage
⅛ tsp salt
⅛ tsp pepper
1 tsp neutral oil, I used spray oil
Garnish with chopped green onions and fresh cilantro.

Directions
Heat your grill pan on medium - high heat. Once hot, spray your pan with oil. Lay your tofu on the pan and grill for 3 minutes. Flip tofu and grill for an additional 3 minutes. Set tofu aside. In a large bowl combine the red bell pepper, carrot, shredded cabbage, salt, pepper, Drew’s Organic Thai Coconut Sesame Dressing, and toss. Assemble your wraps. Lay the tofu down first and add the cabbage mix on top. You can use string to tie the wrap together or just eat it as is.Garnish with chopped green onions and fresh cilantro. Drizzle with additional dressing and eat! Leftovers will last wrapped up in the refrigerator for 1 day.

    ½ package of extra firm tofu, pressed with the water removed and cut into thin long slices.
    3 medium wraps, I used multigrain pita wraps.
    ¼ cup Drew's Organics Thai Coconut Sesame Dressing @drewsorganics
    ½ cup red bell pepper, chopped
    1 large carrot, julienne
    ¾ cup shredded cabbage
    ⅛ tsp salt
    ⅛ tsp pepper
    1 tsp neutral oil, I used spray oil
    Garnish with chopped green onions and fresh cilantro.

    Directions
    Heat your grill pan on medium - high heat. Once hot, spray your pan with oil. Lay your tofu on the pan and grill for 3 minutes. Flip tofu and grill for an additional 3 minutes. Set tofu aside. In a large bowl combine the red bell pepper, carrot, shredded cabbage, salt, pepper, Drew’s Organic Thai Coconut Sesame Dressing, and toss. Assemble your wraps. Lay the tofu down first and add the cabbage mix on top. You can use string to tie the wrap together or just eat it as is.Garnish with chopped green onions and fresh cilantro. Drizzle with additional dressing and eat! Leftovers will last wrapped up in the refrigerator for 1 day.
