  • 💌 A love letter to myself-⠀
You’re working so hard. Everyday you’re making healthy food choices and stretching your comfort zone. It stings when nobody notices that your body is transforming, but you keep crawling along, a little every day. What you don’t realize yet is that you’ve already transformed, inside. Your thoughts are shifting from self doubt to self confidence. You are beginning to recognize that little voice inside of you that guides you in the right direction and cheers you on. She reminds you that you are worthy of your own love and that you are strong. You worry sometimes that it’s all for nothing. Will all of your hard work fall apart…will you one day return to your old habits… to day one? Maybe you should just give up now, it would be easier. But you don’t have to worry, I promise I won’t let us down. I’m working hard too. I think about you, and your strength, anytime I’m faced with the decision to let it all fall apart. Sometimes I crawl, that pace is still comfortable for us from time to time … but I’m also taking baby steps. I stumble a little, and when I do that same inner voice that cheered you on reminds me of how scary it was for you to change… she tells me I can do it too. It’s easier for us now because people do notice the physical transformation. The support and encouragement feels so good, but hindsight tells me that the inner transformation you ignited… without any praise or glory... is more exciting than any outer transformation could ever hope to be. So keep crawling, it’s a long journey, but you’ll get to me. And when you do, we won’t ever fear going back to day one, because we know our own strength. We know the mountains we’ve moved and the hurdles we’ve climbed... that old path is so far behind us now, we wouldn’t even be able to recognize the way back ♥️

  • A SUPER EASY Keto dinner! Broccoli + Mushroom Beef Stir-fry 🌱

A good recipe for a regular meal. 
Let's make it! 👇⁣

Ingredients:
.
2 Tbsps avocado oil, or olive oil divided

1 pound flank steak, sliced into thin pieces

1 large head of broccoli, broken into smaller florets

3 fresh garlic cloves, minced or pressed

1.5 lbs. button mushrooms, cut into quarters

2-3 green onions, sliced

1 Tbsp sesame seeds

Stir fry sauce:

1/4 cup coconut aminos, Bragg's liquid aminos, OR low sodium soy sauce

2 Tbsps fresh squeezed lemon juice

1 Tbsp grated fresh ginger

1 Tbsp sesame oil ---
Instructions:

Heat HALF of a Tablespoon of oil in a large skillet or wok over high heat. Add broccoli and stir fry for 1-2 minutes, then reduce the heat, and add in 2-3 Tablespoons of water. Cover the skillet/wok, cooking for about 1-2 minutes more, or until your broccoli is crisp tender and bright green. Set aside on a plate.

Meanwhile, in a small bowl whisk all stir fry sauce ingredients and set aside.

Heat 1 tbsp oil in the skillet and add in the steak. Stir-fry for 2-3 minutes until cooked to your liking, then set aside.

Add in the remaining oil, garlic and mushrooms. Stir fry for 2-4 minutes.

Return steak and broccoli to the skillet/wok and pour the stir fry sauce on top. Cook for additional 2 minutes, gently stirring into the pan to get everything nicely coated with your sauce.

Sprinkle with green onions and sesame seeds and enjoy! 📷

Mind over Matter! Back then I used to get all kinds of comments of how I was an instructor and I "looked" the way that I did. It baffled people that I was so active and still was overweight. I promised myself a few things when I decided to become a fitness instructor was to keep going no matter what, to beat the odds and break the society mold that I too could be a fitness instructor no matter the size or how I looked, that should I ever know what it tastes, looks and feels like to be a thinner version that I will always remember that woman on the left. As I reflect back to those days and compare to now... So much has changed with me but one thing that wont change is my heart and love for what I do and who I do it for. Create that mindset and keep looking up! Because looking back has nothing and looking up has everything you ever imagined. Dont give up! Fight for your health.

📋 INGREDIENTS:
Cheesecake base:
180g almond flour
55g Erythritol
140g butter, melted
Vanilla and Raspberry Cheesecake:
500g cream cheese
280g heavy whipping cream
1/4 cup water
10g gelatine
70g Erythritol
1 tsp vanilla essence
125g fresh raspberries
Mixed berry compote:
2 cups mixed berries (fresh or frozen)
1/4 cup water
1 tsp Erythritol
Squeeze lemon juice

👨🏽‍🍳 INSTRUCTIONS:
1. Mix almond flour and Erythritol in a mixing bowl.
2. Add melted butter and mix until combined.
3. Using a 6 hole silicone muffin tray, fill each hole with a tablespoon sized amount of base mixture and spread evenly.
4. Place trays into fridge to set. Prepare cheesecake mixture.
5. In a small glass bowl add gelatine and top with the water. Stir and allow to sit for 5mins.
6. Add Erythritol and vanilla essence to the gelatine and melt in the microwave. Stir and repeat until completely melted.
7. In a large bowl add the cream cheese and cream. Using a hand mixer beat together until smooth and fluffy. Pour in the gelatine mixture and continue to mix until well combined.
8. In a small bowl mash the raspberries to desired texture, fold this through the cheesecake.
9. Remove trays from fridge and fill with cheesecake mixture. Place trays back in the fridge to set for minimum 4hrs. (I like to put my cheesecake trays into the freezer until just set, this makes it much easier to pop out of the silicone moulds)
10. Once set remove from moulds and store in an airtight container in the fridge or freezer (less time).
11. Before serving top with berry compote.
12. Place all ingredients into a medium sized pot over a medium heat. Allow sauce to come to the boil and stir to start to breakdown some of the berries. Cook sauce for 5-10mins.
13. Remove from heat and allow to cool before topping cheesecakes... ENJOY GUYS 🙌🏼❤️

1 tsp cayenne pepper
5 cloves garlic, minced
Mix everything together, pan-fry on medium until internal temp is 165125F Stick a slice of cheddar on top.

Bun
It’s as simple as mixing 1 egg, 1 tablespoon Parmesan cheese, 3 tablespoons almond flour and half a teaspoon baking powder in a microwave-safe ramekin, then popping it in the microwave for 90 seconds. Cut in half for two slices, and give it a quick fry in the pan for some crunch. Yum!

INGREDIENTS:
🍫1 cup blanched almond flour
🍫½ cup powdered erythritol, or granulated sweetener of choice*
🍫¼ teaspoon baking soda
🍫½ teaspoon salt
🍫5 tablespoons grass-fed butter, softened
🍫1 egg
🍫1 teaspoon vanilla extract
🍫lilys_sweets_chocolate milk chocolate bar, chopped

INSTRUCTIONS:
1. Preheat oven to 350 degrees F. Line an 8x8inch square baking dish with parchment paper.
2. Combine all dry ingredients (except chocolate) in a large bowl.
3. Add softened butter, egg, and vanilla extract, and stir until combined.
4. Fold in chocolate chunks, reserving a few chunks to garnish the top.
5. Spread batter evenly into a baking dish, and top with remaining chocolate chunks. (note: batter may be thin when spread into the pan, but will rise while baking. Make sure to line the pan with parchment paper, and add the full amount of chocolate. 1 chopped bar is equivalent to about 1/2-3/4 cup chocolate chips)
6. Bake for about 27 minutes, until lightly golden brown on the edges.
7. Allow to cool, slice, and enjoy!

    3. Add softened butter, egg, and vanilla extract, and stir until combined.
    4. Fold in chocolate chunks, reserving a few chunks to garnish the top.
    5. Spread batter evenly into a baking dish, and top with remaining chocolate chunks. (note: batter may be thin when spread into the pan, but will rise while baking. Make sure to line the pan with parchment paper, and add the full amount of chocolate. 1 chopped bar is equivalent to about 1/2-3/4 cup chocolate chips)
    6. Bake for about 27 minutes, until lightly golden brown on the edges.
    7. Allow to cool, slice, and enjoy!

  • ☘️☘️ I wanted to share some keto tips for new faces! If your goal is keto for weight loss & healthy habits, you got this! We started our Keto Journey in April 2017 & never looked back! Together we’ve lost 168lbs by changing our eating habits & exercising.

We’ve been able to easily incorporate Keto into our busy lives and (sometimes) it feels effortless! Let me preface with EVERYONE is different! What works for some may not work for others. So ultimately, doing your own research & trial/error is important. Hopefully, some of my advice can help guide you! I’m the girl that needs: easy, breezy, basic info!
Hopefully, that translates:
.
1. In the beginning, go ALL IN! cut the sugar, carbs, read labels, eat good fats, drink the water. NO cheats or alcohol. Throw the junk away and mentally get your head in the game! I would say give yourself 2-3 months of STRICT Keto. Learn what it feels like to be in ketosis.
.
2. Hydrate, Hydrate, Hydrate. Keto flu is real for some, I luckily didn’t experience it. Detoxing from sugars can be gnarly. It is an electrolyte embalance, so make sure you’re drinking them! Add pink himalayan salt to the water, take potassium and magnesium supplements if you’re struggling. It will go away
.
3. you don’t need to buy “keto” products. Ketosis and weight loss can be achieved thru food alone! If you want to use them, you can. Many swear by them! I didn’t need them. Stay away from as much boxed/processed foods as possible. Yes, they may be sugar-free or low carb, but a lot of times they have unhealthy sugar alternatives in them. Atkins bars and Slim Fast Keto are NOT going to get you healthy! Sometimes necessary, yes, but as much as possible try and stick w healthy fats, veggies, and proteins. We’re doing this to be healthy...not for a quick fix!

4. Try and keep your net carb intake to 20 carbs or less. .

  • 2014 : I had just graduated college. I was around 350 pounds or so maybe more. I try tons of fab diets, but nothing ever stuck.
2015: I ended up losing some weight after college but after i broke my ankle i had gain even more weight back. I had made it to 420 pounds.
2016: After the many medical issues and fail attempts to lose weight i knew i needed to fix my health. At 420 pounds i started a journey that would change my life. From all my pass failed attempts i knew where i went wrong. This wasnt a diet this was going to be a lifestyle change. So started tracking my food intake and exercising daily.
2017 : In 2017 i was down over 200 pounds from 2016. All my hard work had paid off. I continue to make tracking my food and the gym part of my life.
2018: I had to come to the realization that i was at maintenance and i was no longer was overweight. I just had loose skin. I didnt need to lose anymore weight.
2019: Ive manage to continue my healthy lifestyle and stay in maintenance. I track my calories randomly sometimes and workout 5 times a week.
Through this whole journey ive learned alot of things. 1. Weightloss takes time. 2. Doesnt matter how much you exercise you cant out run if your over eating your calories.
3. Losing weight all about calories in vs calories burn
4. Losing weight is hard but not giving up is harder!💪❤

• EVERYTHING is from Walmart, except the yogurts - I got those at target. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
• The bread I get it on the “pita section” at Walmart. It has 5g net carb per half the sheet.⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
• I spent about $112, lasts me more than two weeks for two people. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
• This is only the base of it all, I am stocked up in many other things like condiments, fat some frozen veggies. Just stuff that builds up over time. 🤓 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
• I haven’t tried the Carnitas with salsa verde yet, I’ll def let you guys know what I think! .

1 3/4 cups thinly sliced seedless cucumber
1 pint cherry tomatoes sliced
1/4 cup finely chopped red onion
2 tbsp packed fresh parsley chopped for garnish
Fresh ground pepper

Dressing (blend in food processor):
2 avocados
Juice of 1 lemon
1 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1/4 tsp chili flakes
1/4 cup (packed) fresh parsley
2 tbsp (packed) cilantro

Cook pasta to al dente in salted water. Drain and drizzle with a bit of olive oil (skip oil if you prefer). Add all remaining ingredients and dressing. Carefully stir. 🌿🍃🌿🍃

Mango Chicken Lettuce Wraps
These chicken lettuce wraps are so delicious, the mango salsa that I made along with them really stole the show. Citrusy, sweet, spicy and savory all in one! love using this salsa on shrimp tacos as well.

Mango salsa ingredients
A small avocado (cubbed)
1 ripe mango (I cut it in three pieces and used the 2 sides
without the pit, cut into small cubes)
2-3 tbsp chopped onion
1 Serrano (chopped)
1 tomato (chopped)
Sea salt to taste
Cucumber (chopped)
Juice from 1 lime
What to do
Combine all ingredients. Mix well. Spread on top of butter
lettuce leaves, place grilled chicken on top. Enjoy!

These bodies that are smooth and tight and most definitely something I’ve never experienced. Even at my lowest weight of 114lbs (due to stress) I was fascinated by how differently I did NOT feel. I thought after everything that being thin would feel successful? Nah. Not even a bit. I knew in the end, I just wanted to be HEALTHY. I craved it. I’d been overweight and underweight. I needed to find my balance. OH, and btw, thick or thin, you ARE beautiful. If you choose surgery or enhancements or whatever you want, THAT IS OK IN MY BOOKS 🙌I just want everyone to love the heck out of themselves because BOY OH BOY it is freeing 💕 // Now that's truly inspiring and there's more by beautiful @thebirdspapaya ✨

2 Tbsps avocado oil, or olive oil divided

1 pound flank steak, sliced into thin pieces

1 large head of broccoli, broken into smaller florets

    Ingredients:

    2 Tbsps avocado oil, or olive oil divided

    1 pound flank steak, sliced into thin pieces

    1 large head of broccoli, broken into smaller florets

    3 fresh garlic cloves, minced or pressed

    1.5 lbs. button mushrooms, cut into quarters

    2-3 green onions, sliced

    1 Tbsp sesame seeds

    Stir fry sauce:

We toasted our bread on a pan with butter to get it nicely golden brown, then added a slice of American cheese, some cooked Portuguese sausage, a fresh avocado drizzled with spicy sriracha mayo and topped with Trader Joe’s Everything But bagel seasoning. ⁣⠀
At first we got a really strong eggy smell when we took it out of the microwave which is why we chose to play it safe and not add a fried egg to this sandwich. We will try it next time tho. All in all, this sandwich was perfectly filling and soooo delicious! 👏🏼👏🏼👏🏼⁣ ⁣⠀

I remember when I bought these jeans, and how hopeful it made me to think I could fit in them one day. Now I wear them every weekend. Today, I finally started to feel them get a bit loose. In that moment you really can’t even see the transformation come to life - you’re just there and it seems impossible. Quick fixes weren’t for me. Slow and steady lifestyle changes got me where I wanted to be. I do not mind the stretch marks and the extra skin - if I’m striving for small victories and I’m SHOWING up. Steak with Creamy Garlic Shrimp!⁠

Serves 4 in 25 mins⁠
Ingredients
New York Steak⁠
4 New York Steak strip steaks(Porterhouse steaks)⁠
Salt and pepper to season⁠
1-2 tablespoons olive oil⁠
Creamy Garlic Shrimp⁠
3 tablespoons unsalted butter, divided⁠
8 ounces (250 g) shrimp deveined, tails on or off⁠
4 cloves garlic (or 1 tablespoons minced garlic)⁠
1/4 cup dry white wine or low-sodium chicken broth⁠
3/4 cup heavy cream* (thickened cream)⁠
1/4 cup fresh shredded parmesan cheese⁠
Salt and pepper to taste⁠
1 tablespoon fresh parsley chopped⁠
Instructions
Pat steaks dry with paper towel. Season with salt and pepper.⁠
Heat a large cast iron skillet or grill over medium-high heat. Sear/grill steaks for 4-5 minutes each side until browned and cooked to desired doneness.⁠
Transfer steaks to a warm plate; set aside.⁠
Melt 2 tablespoons butter in the skillet (if using a skillet). Add shrimp to the skillet, season with salt and pepper and sear until just cooked and pink -- about 2 minutes. Transfer to a bowl; set aside.⁠
(For grill: grill seasoned shrimp while brushing with melted butter until done.) To the same skillet, add the remaining butter, add the garlic, sauté until fragrant (about one minute). Pour in the white wine (or broth), and allow to reduce to half, while scraping any bits off of the bottom of the pan.⁠
Reduce heat to low-medium heat, add the cream and bring to a simmer, while stirring occasionally. Add in the parmesan cheese; allow to melt through the simmering sauce. Season with salt and pepper to your taste.⁠
Add the shrimp back into the pan; sprinkle with the parsley, and stir through.⁠

  • ✨Motivation - Over the years I often said I wished I was a certain weight. That magic number changed over time but it always hung over my head…it was the ultimate prize and always just out of reach. But, when I really thought about why I wanted to lose weight and what my goals were…I realized they had so little to do with some random number on my bathroom scale. I said I wanted to be my goal weight but what I really meant was… I want to feel confident and strong. I want to enjoy a day with my girls without being self-conscious of what others are thinking of me. I want to finally believe my husband when he says I’m beautiful. I want to celebrate my life. I want to love myself. Those desires shouldn’t be held hostage by any goal. Something that holds that much power over my happiness is not a goal… it is a prison. Aim your sites higher and let your goals be made up of your hopes and dreams…. Instead of being held prisoner by some made-up idea of what a perfect body weighs ♥️

  • 10 months ago my body used to fill in that entire shirt.

In 10 months I’ve lost 132 lbs and 67 inches off my body with the help of bariatric surgery, calorie/macro tracking, and weight training.

But I haven’t just dropped pounds and inches, I’ve dropped that bullshit mentality. I’m ridding myself of those mental restraints that have always held me back. I’m learning to quiet that voice inside my head constantly telling me that I can’t... That I will never be enough...That I will never amount to anything... I’m freeing myself of insecurities and self doubt.

I spent so much time just existing, but now I am thriving. I’ve given myself the ability to live freely and intently as myself. So free yourself from your restraints, and allow yourself the opportunity to flourish.
