🤍 a HECK ton of roasted veggies (whatever you have goin will do, I used sweet potato, parsnip, onion, mushroom, pepper, broccoli, cauliflower and courgette ~ a v random mix)
🤍 2 @lindamccartneyfoods chorizo and red pepper sausages (the BEST ones!!!) plonked on the top
🤍 grated cheese - stirred through and melted into the bulgar/veggie mix
🤍 voila, u have a delish, nutrish and rly filling meal x .

  • Full ED update - I wanted to give an honest little overview of where I currently am in my ED recovery, I feel like I’ve come along way but at the same time I feel like I’m still being held back. If I’m 100% honest I still feel stuck in a state of quasi. It’s infuriating because a while back I really pushed myself out of this position I stop counting calories, I stop obsessive exercise, I stopped weighing myself, I stopped thinking so much about food, I was really starting to feel more at peace with it. That was until my mental health outside my ED took a dark turn and with that food once again became my immediate coping mechanism and once again I started to fall back into some of my old behaviours. Since then I’ve been stuck, scared to let go again because I’m scared my weary mental state won’t be able to cope, scared that I’ll relapse further and just scared to give up my biggest coping strategy. I want to push beyond that fear but mentally I just haven’t been in a place where I felt like I could handle it. This is my ultimate goal now. I need to get out of this place, I know exactly what I have to do I just have to do it and manage my health outside of my ED as I do. I’m writing this down in hopes it will keep me accountable but also because I want to document that recovery isn’t a path we all follow the same way, I see people left, right and centre who are completely recovered and who have done so in a much shorter time span than me and I need to remind myself that their journey is theirs and mine is mine. I can’t compare because our situations are entirely different, our ED history and mental health histories are different and my goals are different. Maybe my recovery will be a lot slower but then I’m recovering from almost 24 years of disorder, maybe I’ll never 100% fully recover but maybe that isn’t my goal, maybe my recovery is different because it’s mine and not anyone else’s. I’m going to pace myself but I’m going to start taking bigger steps. ———————————————

  • Bees Cheesy Chorizo Surprise 🧀🍅🍽 Method & Ingredients below ⬇️⬇️ You will need: pasta , Parmesan cheese, dry white wine, 250ml double cream, veg oil, mushrooms, cherry tomatoes, spinach, chorizo slices, spring onion, X2 shallots & french stick

Seasoning: salt, pepper, parsley, chilli flakes & paprika - Finely chop your veg
- Put your pasta in to boil - Add tomato, spring onion & mushroom to pan first - allow to soften - season with the above mentioned spices - Add the shallots & stir well - After approx 8-10 mins, add the chorizo slices - Stir well & add the spinach - Pour in the white wine (approx 80-100ml) - Pour in the cream - Allow to simmer for 5 mins & then add Parmesan and stir
- Thicken the sauce with a little corn flour & water mixed to a paste of it is too thin
- Drain your pasta, and gradually add it to sauce (stir well)
- serve with Parmesan garnished on top 
Garlic bread (so easy to make): - Melt butter , stir in garlic paste and fresh chopped parsley.
- Slice a french stick

My tagliatelle “bianchi e neri” with shrimp from Pasta Lover’s Diary is inspired by my mom’s shrimp pasta. Almost every summer when I was growing up, we’d visit Hilton Head Island (Ohioans LOVE HHI). And every year, my mom would buy gigantic fresh shrimp from a stand off the side of the road to make shrimp pasta. I have the most vivid memories of helping her peel and devein shrimp (my sisters were not up for that task but I loved it lol) and then watching her whip up the most magical, delicious shrimp pasta. To this day, my mom’s shrimp pasta is one of my death bed meals. I hope my version comes close❤️ #pastaloversdiary #linkinbio
