  • ✨🍴Two of my favorite things; vivid colors & yummy, filling foood.😸When you have a bunch of random ingredients at home, throw it all together & create your own little plate of art✨

#breadedchicken topped with capers, a #mango 🥭#kale 🥬 salad, and buttery 🧈 garlic 🧄 pasta topped with #mushrooms 🍄 & #tomatoes 🍅 .

I soaked my kale in water and vinegar to make sure it’s super clean. Then, drain it out using a strainer. Since I didn’t want the kale to be too soft, and wanted it to have a nice texture/crunch, I steamed it for 7-10 minutes on medium heat. Then I put all of the kale in a large bowl, and mixed it up and olive oil, salt, pepper, a hint of balsamic vinegar. I cut up 2 mangoes 🥭 over the bowl to ensure to get all of the juices in the salad. And added in all of the chopped mango chunks. Yummm. Mix it all up, and there you have your kale mango salad 🥗😋

 I sautéed the mushrooms with olive oil, garlic, salt, pepper. Then, put aside in a bowl ✨

I boiled my #ziti for 10 minutes with salt and olive oil. ✨Then, strained it and put in back in the pot. I added 4 spoons of butter, salt 🧂, and added in the mushrooms, & tomato 🍅. .

✨ I make my breaded chicken with un-seasoned Panko bread crumbs, and add in #sazon Adobo, Badia complete seasoning, powdered garlic, salt, pepper, lil parsley. Breaded up the chicken using eggs & flour. Finallyy I bake on 350 for about 30 minutes 🥳😸... tada! .

  • I sauteed ground sausage with a half of shallot & 3 cloves of garlic. Added baby bella mushrooms, frozen peas, some sauce I had leftover in the fridge, chicken broth & a little bit of heavy cream. I let it simmer for a few minutes & added angel hair pasta,  parmesan cheese & a little red pepper flakes. Not healthy but delicious.

  • Did someone say MOCHI DONUTS??? Took the drive to #SanJose for the @modohawaii pop-up for these, and it was so #worthit! The #mochi makes these #donuts light and fluffy, so you don’t have that heavy feeling and can just keep eating more. The flavors I got were #pandan, #strawberry and #honeydew sugar, which were so unique and so delicious! Dare I say the best donuts I’ve ever had!

  • 🍩 Today is #NationalDonutDay, so we enjoyed a bowl of Cap’n Crunch’s Sprinkled Donut Crunch which was sadly discontinued during the summer of 2019. But of course, we still have two boxes. I love how crunchy this cereal is, and the candy-like sprinkles on each piece add another dimension to the crunch sensation which we are fans of. The donut on the box is a vanilla sprinkled donut which is an accurate representation of the flavor, but this sweetened corn & oat cereal has buttery notes as well. This separates it far from birthday cake flavored cereal which some may compare it too.

🍩 While we’re on the subject, we also want to recognize Cap’n Crunch’s OOPS! Choco Donuts which released in 2002 and then “OOPS!” got discontinued sometime afterwards...I blame this on @MrBreakfast_com giving it a poor review back in 2003. 😅 This and Oreo O’s were our favorite cereals growing up. Oreo O’s thankfully returned. We’re just waiting on these now, Cap’n. Please? @RealCapnCrunch

  • Everybody minding their macros... The carb question. Eat them or not? Restrict them or not? Good carb vs healthy carb...is there a such thing? What are carbs? 
Carbs are sugars divided into 3 categories: monosaccharides (simple carbs), oligosaccharides (short chains of monosaccharides such as maltose, sucrose, lactose) and polysaccharides (poly meaning many sacchrides). But let’s keep it simple...My friends, carbs are your friend. 
I recently watched a video on Instagram from a fit celebrity who has a phenomial physique and is in great shape. This person was talking about how they believe we could totally live without eating carbs. I’m sorry, that’s ridiculous! Your body needs carbohydrate. Your brain functions best with carbohydrate. Want full muscle bellies? Carbohydrate required. Energy? Carbs please. It’s the kind of carbs and quantity that make or break you. Your body and hormone equation  is unique to you. There’s no cookie cutter menu. But I want you to know that eating fruit has sugar, but fruit sugars do not process the same in the body as synthetic and processed sugars. Most research says no more than 50g fructose/day, but fruit sugars don’t seem to contribute to insulin issues because of the water, fiber and phytonutrients density. So eat some fruit. 
Refreshing, nutritious, fiber dense and delicious. I’ve been eating tons of fresh blueberries! What’s your favorite fruit?

Try this Enchilada-inspired ⁣
Chicken 👌🏻⁣

🔸1 tsp coconut oil⁣
🔸300g chicken, cut into bite-sized pieces⁣
🔸1/2 a small red onion, sliced⁣
🔸1/2 a bell-pepper, diced⁣
🔸1 tsp ground cumin⁣
🔸1 tsp ground coriander⁣
🔸120g tinned refried beans⁣
🔸50g (drained weight) tinned ⁣sweetcorn, rinsed and drained⁣
🔸small bunch of fresh coriander, ⁣finely chopped⁣
🔸200g tinned tomatoes, ⁣or use passata⁣
🔸1/2 tsp hot chilli powder⁣
🔸1/2 tsp garlic powder⁣
🔸2 tsps brown sauce (optional)⁣
🔸20g Cheddar cheese, grated⁣
🔸60g ripe avocado, sliced⁣
⁣
Method:⁣
Heat the oil in a frying pan over a medium heat. Add the chicken and fry for 6-8 minutes, stirring occasionally until cooked. Transfer to a plate and set aside.⁣ Add the onion, bell-pepper, ground cumin and ground coriander to the frying pan. Stir well and cook for 2 minutes. Add the chicken back into the pan. Add the refried beans, sweetcorn, fresh coriander, tinned tomatoes, chilli powder, garlic powder and brown sauce (if using). Cover and cook for 3-4 minutes, stirring occasionally. Serve topped with cheese and avocado. Serve on a bed of steamed rice.⁣

  • Took some time yesterday to listen and learn from what others had to say online & became totally inspired by the discovery of @grandbabycakes amongst many other Black creators that I recently started following! I just made Jocelyn’s cajun shrimp linguine recipe (with clams because I’m allergic to shrimp and with mafaldine because I’m out of linguine) and it is SO good. There was an “omgggg” followed by almost every bite - that’s when you know. 😊🔥✨
