This morning on my walk I thought about what I want to achieve over the next 4 weeks, putting it on paper(insta) really helps me focus on these goals.
.
I don’t know about anyone else but lockdown has definitely not been a productive time for me, it’s been tough, it still is tough! It’s a rollercoaster of emotions and some days I feel like I can do it all others I don’t want to leave bed!
.
These little goals are realistic and achievable, they’re not weight based or calorie based they’re simply there to try and help my mental wellbeing. 🌿

  • 🍦 Helado de avellana y chocolate negro 🍫 .
🔥 En Madrid ya hace calor, y aunque el bowl de frutas y yogur está genial, un heladito para merendar a modo excepcional es genial.

📝 Los ingredientes que necesitaremos para cuatro mini helados (yo he usado el molde de helados silikomart mini classic) son:
.
▪️50 g de yogur griego 🍦 ▪️45 ml de nata líquida (35% mg) 🥛 ▪️60 g mantequilla de avellana 🥜 ▪️1 chorrito de esencia de vainilla 🍂 ▪️25g de eritritol o 50g de dátiles 🌴 ▪️80 g de chocolate 85% 🍫 ▪️1 cucharada aceite coco 🥥 ▪️Frutos secos picados para espolvorear 🥜 .
✏️1.- Si usamos dátiles los hidratamos con agua caliente y pasados 10 min los trituramos con las avellanas o crema de avellanas en una procesadora potente. .
📎2.- Mezclamos la crema conseguidas con el yogur, la nata y la esencia de vainilla. Mezclamos bien. (También podemos triturar todo junto en la procesadora).
. 📌Si usamos eritritol, mezclaremos todos los ingredientes y listo. Podemos usar cualquier crema de fruto seco.
.
✏️3.- Rellenamos los moldes de helado y refrigeramos 2 o 3 horas.
.
📌4.- Derretimos el chocolate con un poco de aceite de coco, bañamos el helado y dejamos escurrir el chocolate sobrante. Como el helado está frío, solidificará la capa de chocolate. Si le ponemos frutos secos picados, habrá que hacerlo antes de que solidifique. Aunque podemos mezclarlos directamente con el chocolate y bañar el helado en la mezcla choco+fruto seco. .
💕 Y ahora solo nos queda disfrutar de un helado casero, que sacia un montón y que tiene por mini helado 210 calorias. .

  • 🏫Le retour à l'école s'est très bien passé mais comme il n'est pas un enfant prioritaire (nous sommes à la maison et il est très bon élève) il n'ira donc pas tous les jours ni toutes les semaines. Donc il continuera l'école à la maison et ira à l'école encore 6x en tout. 📒 🥳Nous sommes maintenant en zone verte, ce qui dit que les parcs vont réouvrir 🍀 🍫Un smoothie bowl au lait de noisette 🌰, chocolat en poudre, noix de coco 🥥, graine de chia ✨ et banane 🍌

🌸Gyming slowly. Makes a difference.
🌸Walking and a podcast
🌸Lying in bed slightly longer (definitely a privilege I am lucky to have but embracing it while I can).
🌸Oil pastels. Really fun.
🌸Sending cards to people I miss.
🌸Watching a series slowly.

Simple things that add up. We always look after our physical health so need to look after our mental health in just the same way!

I’m feeling really affected, sad and vulnerable about all the things going on lately. The pandemic, the wars, killing of innocent people, the structural racism and injustice, the normalization of violence and hate, climate change etc. There’s just so much shit going on and everyday I read about something new that has happened that breaks my heart and makes me cry. And most of the time it’s something that we humans are actively doing towards each other. WE are killing each other, WE are hurting each other and WE are causing pain and suffering to our fellow humans, animals, the planet and other living beings by our actions. It’s insane. And why?! Because we are so wounded and unhealed and because we’ve lost touch of what is really important in life. 😔

So I want to do something to help, and I’m thinking of writing a book. 📔 A book about how we can heal ourselves and by doing that also heal the global collective. How we by simple actions and choices in everyday life can create and co-create loving and peaceful environments where we and everyone around us can grow. How we can choose love and openness instead of fear and hate and what great power comes with just one person healing and being one with unconditional love. ❤️✨ So what do you think?! Would you read my book or does it sound crazy af?! 😝 please give me input so I can be inspired about how to contribute to the collective in this difficult time... thanks! 🙏🥰

  • Rotes Linsen-Chili 🌶 
Hier mal eine andere Variante des „Chili sin Carne“ für euch 😊❤️ 2 Zwiebel, rot
1 Zehe Knoblauch
1 Paprika, rot
1 Deko Jalapeño (wer mag)
2 EL Rapsöl
2 EL Tomatenmark 
250 g Linse, rot
350 ml Gemüsebrühe
1 Dose gehackte Tomate (ca. 400 ml)
1 Dose Kidneybohnen (ca. 400 ml)
kleine Dose Mais
2 TL Cayennepfeffer
2 EL Creme Fraich (ich nehme die pflanzliche Variante, wenn ich es nehme) 
1 Limette zum abschmecken 
Die Zwiebeln und den Knoblauch pellen, die Paprika entkernen und alles in feine Würfel schneiden. In einem hohen Topf mit etwas Rapsöl bei mittlerer Hitze anschwitzen.

Sobald die Zwiebeln glasig sind, die Linsen hinzugeben und für ca. 2 Minuten mit anschwitzen.

Mit der Gemüsebrühe ablöschen und die gehackten Tomaten hinzugeben. Alles für weitere 10 Minuten kochen, bis die Linsen fast gar sind.

Die Kidneybohnen, den Mais, das Tomatenmark, sowie den Cayennepfeffer unterrühren, für weitere 2 Minuten köcheln lassen und mit Creme Fraich und Jalapeños dekorieren und seevieren.

Pro Portion ca. 490 kcal, 60g carbs, 13g fat, 33g protein 🤤

  • Buffalo Cauliflower Salad 🥗 Yesterday’s dinner was today’s lunch! Leftovers aren’t everyone’s thing but I normally think food tastes better the next day because I didn’t have to cook it haha. I make a big batch of this cashew cheese sauce almost every week and eat it with everything 😍 -

#lunch details 👉🏻 Buffalo Cauliflower:
1 head of cauliflower, cut into bite sized pieces, added 2 tbsp olive oil  baked at 425 for 25 minutes on the same pan as the sweet potatoes. 
Then added to a bowl and coated with 
2 tbsp nutritional yeast 
1/3 cup hot sauce 
1/4 tsp chili powder 
1/4 tsp paprika 
1/2 tsp garlic 
Sprinkle of salt
Broil for 2-3 minutes -
Cashew Cheese Sauce: 
1 cup soaked cashews (soak for at least 4 hours- overnight) 
1 cup water 
2 tbsp nutritional yeast 
1 tsp garlice powder
1 tsp onion powder 
1/2 tsp paprika
1/2 tsp sea salt 
1/2 tsp Chipotle powder 
Combine everything in a blender or food processor and purée.

  • E umas panquecas de abóbora e cacau para começar o dia? 🥰 É uma das receitas que mais gosto, quem me segue atentamente no blog sabe que abóbora é quase o meu nome do meio 😂

Uma das dicas que dou sempre para fazer puré de abóbora em receitas doces é retirar bem a água para que fique um puré bem espesso. Tanto o puré de abóbora como o de maçã ajudam as panquecas a ficarem macias e fofinhas 😊

Nach gefühlt 117 Jahren ist endlich die Lieferung der Bücher wieder eingegangen und nun überall wieder auf Lager. Dazu verlos ich wie jedes Mal später wieder ein paar in ner Story. Hab glaube ich ne gute Idee dazu. Muss aber noch unendlich viele Sachen abarbeiten - dazwischen aber schnell was futtern. ⁣⁣⠀

100g Tomatenfruchtfleisch aus der Dose (25kcal) mit einem guten Schluck Wasser erhitzen. 50g Kichererbsen (60kcal) sowie 150g Blumenkohl (38kcal) dazu geben. Hab den Kohl in kleine Röschen geschnitten und nicht vorgekocht. Dadurch behalten sie in der Pfanne etwas Biss. Mit Salz, Pfeffer, frischen Koriander, Paprika Edelsüss, etwas Tomatenmark sowie Knoblauch würzen und köcheln lassen. In der Zeit 50g Couscous (175kcal) in etwas Gemüsebrühe aufkochen - geht super fix. ⁣⁣⠀
