It’s been a good breakfast weekend! ⁣

I used @vego_chocolate spread for the chocolate filling and after a few failed pancake attempts lately I was very happy to of finally perfected this crepe recipe 👌🏼 ⁣

The trick is to let the mixture stand for at least 10 minutes before frying! ⁣
⁣
Simply whisk together 1 egg, 150ml almond milk, 50g plain gf flour and 1tsp sugar et voila 😘⁣

Vegan Fried Egg:⁣
For the white ⁣
1 tbsp rice flour⁣
1 tbsp almond milk ⁣
Pinch of kala namak (for egg flavour)⁣

1/2 tbsp olive oil ⁣
3/4 tbsp almond milk ⁣
4 tsp corn flour ⁣
1 tsp nutritional yeast ⁣

Whisk together the ingredients for the white. Spoon a circle of mix into the pan, it should be about 0.5cm thick. Fry on a medium heat until the sides start to lift from the pan⁣

In a small saucepan, add the oil and almond milk and whisk on a medium heat. Add the nutritional yeast and kala namak and whisk to combine. Separately, mix the corn flour with a couple to tsps of water. Gently pour into saucepan and whisk quickly. The “yolk” should come together and thicken. Add more corn flour mix until it becomes a thick consistency. Spoon onto the circle of white and finish with a bit of pepper!

  • So my human guinea pig that is subject to trying all my vegan food attempts has been requesting a lotus biscoff cheesecake since what seems like the dawn of time 🌎 As the weather was meh yesterday I gave in and decided to give it a whirl 🌪

I used @sophie.bullimore recipe but switched the digestive biscuit base for @lotusbiscoffuk biscuits cos you can’t get enough lotus in your life can you 🤷🏽‍♀️ however if you saw my story this presented a little problem as I couldn’t find any lotus biscuits anywhere 😱😱 so instead I used an @aldiuk version which are #accidentallyvegan (swipe ➡️ to see which ones I mean) -
Pretty impressed if I say so myself for my first vegan cheesecake 👩🏽‍🍳 I was too scared to take the cheesecake off the base to begin with as you can see on the second picture (couldn’t ruin it before I got a photo for insta eh?! 📸) but it was actually easy to do!

Portem uns dies desaparegudes perquè tocava aprofitar la fase 1, però ja us avisem que aquesta setmana tornem amb ganes i vàries receptes!!💃🏻 Avui, us compartim una altra recepta familiar! 👵🏼 Esperem que us agradi!

Ingredients (4 persones):
🍜 400gr Fideus n*4
🌶 1 Pebrot vermell
🌶 1 Pebrot verd
🧅 1 Ceba
🍄 40gr Bolets secs (moixernons i ceps)
🍞 150gr Tofu
🍅 300gr Tomàquet triturat
🍯 Oli
🧂 Sal .

Elaboració:
1. Posem en remull els bolets en aigua calenta durant 30 minuts, els escorrem i reservem els bolets i l’aigua.
2. En una cassola sofregim el tofu. Afegim les verdures tallades al gust (a nosaltres ens agraden ben petites per aquest plat) i quan estiguin una mica fetes hi afegim els bolets. Un cop tot cuit afegim el tomàquet i el deixem coure a foc mig uns 15 minuts.
3. Afegim l’aigua dels bolets i quan bulli hi tirem els fideus. Si durant la cocció faltés aigua podem afegir-hi més aigua o brou de verdures. Rectifiquem de sal i a gaudir-ne!!!☺️

Els fideus originals sempre havíen portat costella de porc i curiosament, tot i ser amant de la carn, sempre m’hi havia fet nosa en aquest plat, així que la versió amb el tofu és geniaaaal en tots els sentits☺️.

You can order vegan chickn patties, popcorn chickn, and more from the website in @atlas.monroe bio. They even sell their dipping sauce 🤪

For the time being my posts will only consist of food from vegan and vegan friendly Black- owned restaurants. I encourage my fellow foodies to do the same!
I understand this is a small way to advocate but I want to support as much as possible.

  • Vegan Philly Cheese “Steak” Eggrolls 👇🏾

By now, you know my love for mushrooms. I eat them all of the time. I should be a mushroom by now 😂 lol. Not only do they taste good, but each mushroom has it's own amazing health benefits!

For example:
🍄 #Oystermushrooms have anti-inflammation properties
🍄 #Lionsmane supports brain health
🍄 #Portobellomushrooms are a great source of B vitamins

I made these eggrolls using baby bella mushrooms but you could try them with oyster mushrooms, shiitake, chanterelle, or maitake! I followed the Philly cheese “steak” recipe on my website but instead of adding the veggies to a hoagie roll, I wrapped them in egg roll paper.

TIP: After you finish cooking the veggies, be sure to drain any excess liquid before adding them to the eggroll paper. Fry them for 1-2 minutes on both sides or until golden brown.

  • Although over the past few days there has been a lot of hurt... it has been pretty cool to see so many come together to provide resources, ideas, ways to help, etc. I love that there’s been an emphasis that things don’t end with a black screen and this doesn’t blow over. It’s important to keep going + carry this into our everyday lives and I feel grateful that I’ve been provided with so many tools to learn. So THANK YOU to every one of you 💗 another thing I’ve been thinking about is that I’m thankful to learning so much now so that one day when I have a family of my own, I can share what I’ve learned. Sending everyone a hug today and always 🙏🏼 .

On the agenda today → making my EASIEST EVER PEANUT BUTTER COOKIES from the blog ✨

Ingredients (makes 18)
1 cup peanut butter
1 cup organic cane sugar (or coconut sugar)
1 egg
1 tsp vanilla extract
1/2 tsp baking soda
Sea salt for topping

Instructions
1) Preheat oven to 350F. Line a baking sheet with parchment paper.
2) Mix all ingredients 
3) Roll into balls (about 2 tablespoons each).
4) Make a criss cross pattern on each cookie dough ball with a fork.
5) Bake 10-12 minus or until the edges start to get slightly crispy 🍪 top with sea salt! .

  • Hot Buffalo Wingz (vegan) by @plantcrazii 🖤

You will need:

1 medium size pack (300g) of Oyster mushrooms *rinse them well

Wet ingredients:

2 cups thick unsweetened plant milk(I used pea milk)
1TB vinegar
1/4tsp black pepper
1/4tsp salt
In a bowl,mix everything together

Dry Mix:

1Cup All purpose flour
1Cup Corn Starch
1tsp all purpose seasoning
1/2tsp white pepper
1/4tsp black pepper
1/2Tb paprika
1/4tsp garlic powder
1/4tsp salt
In a bowl, mix everything together

Place all your oyster mushrooms into the wet mix bowl
and gently mix them in until they are all coated.

Next, Dip them into your dry mix batter and again into the wet mix and again into the dry mix.
You want them all double coated.

Deep fry all your pieces in hot oil until crisp and set them aside(*for extra crisp you can double fry them after they have rested for 5minutes)

Buffalo Sauce:
In a pot on medium-low heat, mix in the following:
1 cup Buffalo sauce(I used Franks red hot sauce)
1/2Cup water
2Tb dairy free butter,2Tb brown sugar,1/4tsp liquid smoke
Cover pot for 5 minutes & done.

Let your sauce cool for 3 minutes and toss your crunchy "wings" into the sauce
until they are all fully coated.

1.5 cups almond meal⠀⠀⠀
1 cup dates⠀⠀⠀
1/4 cup almond milk⠀⠀⠀
1 tbs cacao powder - we use @morlife_.⠀⠀⠀
.⠀⠀⠀
FILLING:⠀⠀⠀
1/4 cup melted coconut oil⠀
1/2 cup crunchy PB⠀⠀⠀
1/3 cup crushed peanuts⠀⠀⠀
2 tbs rice malt syrup (can use honey for non vegan).⠀⠀⠀
.⠀⠀⠀
CHOC TOPPING:⠀⠀⠀
3 tbs coconut oil (semi-melted)⠀⠀⠀
2 tbs cacao powder⠀
1 tbs almond milk⠀⠀⠀
1 tbs rice malt syrup/honey.⠀
.⠀
1. Heat dates in the microwave for 30 secs until soft.⠀⠀⠀
2. Blend dates with all base ingredients until smooth.⠀⠀⠀
3. Push base into small lines tin.⠀⠀⠀
4. Mix filling ingredients together in a small bowl.⠀⠀⠀
5. Pour the filling over the base.⠀⠀⠀
6. Stir choc top ingredients together in a small bowl.⠀⠀⠀
7. Pour over the slice & top with coconut (optional).⠀⠀⠀
8. Place in the freezer to set!! Store in the freezer!! 🙌🏻
