Ich kann nur sagen, es war ganz hervorragend! Toller Service, perfekte Gastgeber, herausragende Gerichte! Es war alles sehr gut. Natürlich eher klassisch, aber das Zusammenspiel der einzelnen Komponenten auf jedem Teller, sowohl in den Texturen als auch dem Geschmack war ein Traum!👍🏼😊
Auf den Tellern seht ihr als Vorspeise Ravioli von jungen Erbsen & Pfifferlingen, Wildem Spargel und Haselnuss Hollandaise, gefolgt von einem Entenleberparfait mit Ananas (unbedingt einen Süßwein dazu trinken - 💣), Tranche vom Bretonischen Steinbutt und 
als Hauptgang Taube mit Artischocke, Spargel und Purple Curry.  Besonders das extra servierte „Taubenklein“ war raffiniert!!

  • I must admit, this was my first time frying anything and I couldn’t have been happier with the results! The process was super quick and easy! These golden-brown pieces of Nashville hot chicken were as delicious as they looked.

To start off, cut a whole chicken into 8 pieces and cure it with salt for 24 hours. After the chicken is cured, fill a medium sized pot with oil and bring it up to 325 F. When the oil is coming up to temperature, prepare the dredge mixture, buttermilk dip and hot oil spices (sans oil) by mixing all the ingredients listed below. Once the oil is heated make sure to dredge the chicken, dip it into the buttermilk dip and then back into the dredge. Repeat this process with a couple pieces and then place the chicken into the oil for 15-18min (or when the internal temperature hits 165 F)

  • Spicy Cashew Butter Stir Fry by @themindfulhapa 💚 (gluten-free) 
2-3 tbsp olive oil 
½ large onion, chopped
3 cloves garlic, peeled & minced
1, 8oz package mushrooms, hut in half vertically & sliced 
1 cup sugar snap peas, kept whole or sliced
rice noodles, cooked according to package instructions

Spicy Cashew Sauce
⅓ cup cashew butter
2 tbsp spicy sesame oil (if you don’t have, you can use regular sesame oil + hot sauce of choosing)
3 tbsp soy sauce
2 tbsp lime juice (~1 lime)
2 tbsp coconut sugar
1 tbsp mirin
1 tsp rice vinegar
3-4 tbsp water, to thin
— 
1. Start by making your sauce - add all ingredients (except water) to a small bowl and whisk together until combined. Finish off by adding 3 tbsp water plus any additional until desired consistency is reached.
2. Next, add 1 tbsp olive oil, chopped onion, and minced garlic to a large skillet. Sauté for 3-5 minutes over medium heat or until onions have started to brown. Remove from pan and set aside in a small bowl. 
3. To the same large skillet, add another 1-2 tbsp of olive oil along with the sliced mushrooms. Cook for ~5 minutes over medium heat or until they have browned nicely.
4. Add the snap peas to the pan and saute for 2-3 minutes or until cooked to preferred consistency.
5. Re-add the onion/garlic mixture back to the skillet along with the rice noodles (cooked according to package instructions) and stir together.
6. Top with preferred quantity of spicy cashew sauce and stir together until everything is evenly coated. 
7. Optional: garnish with chopped cilantro, crushed red pepper flakes, and chopped toasted cashews before serving.

  • A summer take on roast chicken - roasted chicken thighs, simply with salt, lemon and garlic, served on sautéed peas with shallot, white wine and the pan juices from the chicken & charred baby gem lettuce. I know cooked lettuce is a contentious issue for some (though @nigellalawson is team for it, so you should be too) but this truly was delicious. I took inspo from the fabulous @nigelslater who is truly a king when it comes to helping you make the most of the tired looking veg in your fridge & as if by magic, transforming them into the most delicious part of a meal.

SAVORY SCONES (makes 8 2-inch scones)
- 225g flour
- 1/8 cup sugar
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 stick unsalted butter
- 105g total of egg + milk
- 1 egg yolk for wash

  • My toughest critics 😂😋. None of my recipes get posted unless it’s approved by my little munchkins. 
I’ve always loved cooking and baking. I used to spend hours in the kitchen with my mom watching her cook. I used to roll the mochi balls for her guinataan. I’d help peel wrappers for lumpia, and individually pluck each marunggay leaf off the stems for tinola 😂. It wasn’t until I was a struggling college student when the passion for cooking really started. I had to stretch the few dollars I had left after rent. Instead of eating out on a regular basis, I’d cook 3 meals and eat it throughout the week. This was pre YouTube days so there were no videos to follow. I’d call my mom and she would guide me step by step. So many trial and errors, but it was so rewarding when dishes came out perfect. Now, I get to share my passion with people all over and that truly makes my heart happy! Mahalo to those who have shown their love and continued support. ❤️ .

Creamy Shrikhand with the goodness of Avocados 🥑🥑 I might have gone a bit overboard using Avocados in every meal (this week🙈), but can happily vouch for this one, it sure has my 💚

Made with hung curd, Avocado pulp, cardamom powder and sugar. Whisk everything until its silky smooth and top it with nuts and saffron strands. Best eaten chilled, the boys had this for dessert!

  • Peri Peri or Piri Piri is a pepper found in South Africa, while the origin of the dish is Portugal. I have not been to any of these places yet, however, I have been to Nando's. So whenever I think of Peri Peri chicken, I can only think of Nando's and I am sure most of you would agree with me on this. The juiciness of the chicken dipped in that tangy sauce, Mamma Mia!! Today I really felt like recreating this dish at home and since it's the last day of the week, I was short of ingredients, so I used whatever I found in my fridge. Surprisingly, it tasted almost what my palate wanted. 1 cup quinoa, rinsed
1 cucumber
1 small red onion, cut into 1/4-inch cubes
1 large tomato, cored, seeded, and diced
1 bunch Italian parsley chopped
1/2 cup extra-virgin olive oil
1 lemon, juiced
1 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 hass avocado diced, for garnish

•Bring 2 cups of water to a boil in a large saucepan and add the 1 cup quinoa, stir once, and return to a boil. Cook over medium heat for about 12/15 minutes. •When dry, transfer the quinoa to a large bowl. Add the cucumbers, onion, tomato, parsley, olive oil, lemon juice, salt, and pepper and toss well.
•I had arugula as my leafy green base •Love capers? Yeah, me too! This would be a perfect dish to add capers as well! 😋

- 2 bacon slices;
-  2 pieces of bread;
-  1/4 cup of peas;
-  3 large mushrooms;
- 3 slices of tomato;

Process:

1) Heat the flat grill plate over a low heat, brush sparingly with light olive oil.

2) Cook the sausages first. Allow to cook slowly for about 15-20 minutes, turning occasionally, until golden. After the first 10 minutes, increase the heat to medium before beginning to cook the other ingredients.

3) Cut bacon. Place the bacon straight on to the grill plate and fry for 2-4 minutes each side or until your preferred crispiness is reached.

4) For the mushrooms, brush away any dirt using a pastry brush and trim the stalk level with the mushroom top. Season with salt and pepper and drizzle over a little olive oil. Place stalk-side up on the grill plate and cook for 1-2 minutes before turning and cooking for a further 3-4 minutes. Avoid moving the mushrooms too much while cooking.

5) For the tomatoes, cut the tomatoes across the centre. Season with salt and pepper and drizzle with a little olive oil. Place cut-side down on the grill plate and cook without moving for 2 minutes.

6) For 'proper' fried bread it's best to cook it in a separate pan. Heat a frying pan to a medium heat and cover the base with oil. Add the bread and cook for 2-3 minutes each side until crispy and golden. For a richer flavour, add a knob of butter after you turn the slice.

7) For the fried eggs, break the egg straight into the pan with the fried bread and leave for 30 seconds. Cook to your preferred stage, season and gently remove.

8) Once all the ingredients are cooked, serve on warm plates and enjoy straight away.

  • 🇺🇸/🇬🇧 Brocciu with roasted eggplant and caramelized hazelnuts 👌🏼 topped with some thyme, mint and olive oil and served with fresh focaccia it’s just so delicious!
To roast the eggplant : cut it into slices, place on a baking tray, add a generous drizzle of olive oil and sea salt. Roast in oven at 400F/200C for 40 to 50 min.

🇫🇷 Le déjeuner de ce midi inspiré par @stephatable , un délice! 
Aubergines grillées, brocciu et noisettes caramélisées 🍆 avec de la menthe, du thym et de l’huile d’olive 🌿 servi avec de la focaccia c’est 👌🏼
J’ai battu le brocciu avec du sel et du poivre pour plus d’onctuosité, et pour les aubergines, je les ai coupés en tranches, et je les ai faites cuire à 200C pendant 40 à 50 min avec de l’huile d’olive et de la fleur de sel.
Et pour les noisettes, je les coupe en 2 et je les fais caraméliser à la poêle avec huile d’olive, miel et un peu de beurre (ça évite que tout ne s’agglomère).
Bon appétit!
