  • Turkey meatballs in coconut with cauli-rice, a low carb, protein packed dish covered with the aromatic taste of coconut. Cauliflower rice is a great low carb alternative and soaks up curries and sauces pretty well.

I flavoured the meatballs with garlic, chilli, basil and lime, before frying in coconut oil with some sliced peppers, garlic and onions. Once browned I added coconut milk, more basil and chilli, allowing it to simmer and seasoning to taste. .

  • Pre gaming because tomorrow is pancake Sunday and I can’t wait to share the recipe I’ve been using which is not new at all or made by me but it’s so good 😊

Banana Pancakes:

-50 gr oats
- 1/2 banana 🍌

(分量:4人分 調理時間:30分~1時間)
-
◆材料と分量
1. ☆煮干し…10尾
2. ☆水…1200cc
3. A 醤油…150cc
4. A てんさい糖…大さじ3
5. A かつお顆粒…小さじ2
6. A 鷹のつめ…5本
7. A 米酢…25cc
8. B かぼちゃ…1/2個
9. B なす…5本
10. B 蓮根…1本
11. B オクラ…1袋12本
12. B しいたけ…1袋6枚
13. B エリンキ…2本(1パック)
14. B 赤パプリカ…1個
15. ボーソー米油…適量

◆作り方
-
1. ☆印で煮干の出汁を作る。
煮干は頭を取り、背びれのほうから2枚に裂いて腸を取る。
分量の水に煮干しを入れ、火にかけて沸騰したら弱火にし、10分間乳白色になるまで煮出して火を止める。
-
【A】の材料でつゆを作る。
-
①煮干しの出汁に醤油とてんさい糖、かつお顆粒、米酢、鷹のつめを入れる。
ここまで12分ぐらい。
冷ましている間に野菜を揚げる。
-
2. 【B】の野菜の下準備
-
・かぼちゃは縦に1センチ幅のくし型。
・レンコンは5~7ミリの幅の輪切り。
・オクラは塩で産毛をこすり取り、茎の部分の皮を包丁で剥く。
・ナスは縦半分に切り皮に細かい亀の子に切れ目を入れる。
・しいたけは石突を取る。
・エリンキは石突を取り縦に4等分に切る。
・赤パプリカは1センチぐらい幅のくし型切り。
-
3. 鍋底から約3cmまでボーソー米油を注ぎ入れ、170度でかぼちゃを揚げる。
中までじっくり約2分間火を通す。
竹串がすうっと通れば良い。
-
4. ボーソー米油の温度を200度に上げる。
ナス、レンコン、しいたけ、エリンキ、オクラ、赤パプリカを30~40秒ぐらいで揚げる様にして一気に揚げる。
-
揚げた野菜をペーパーの上でよく油を切る。
茄子などは油っぽいのでペーパーでふき取ることをお勧めします。
5. 揚げた野菜を南蛮出汁に漬けたら完成です。
30分後から頂くことが出来ます。
夏場は冷蔵庫で2時間ぐらい冷やすととっても美味しく頂くことが出来ます。

素麺に非常に合いますので漬け汁事茹でた素麺と一緒にお召し上がりください。

◆ワンポイントアドバイス
-
・カボチャは揚げすぎないようにしてください。
揚げすぎると崩れます。
中までしっかり火を通りてください。
-
・市販品の麺つゆでも美味しく出来ます。
市販品麺つゆの濃度は素麺を入れて頂いても調度良い味に薄めてください。
-

・冷蔵庫で保存し5日間までに食べきって下さい。

    ◆材料と分量
    1. ☆煮干し…10尾
    2. ☆水…1200cc
    3. A 醤油…150cc
    4. A てんさい糖…大さじ3
    5. A かつお顆粒…小さじ2
    6. A 鷹のつめ…5本
    7. A 米酢…25cc
    8. B かぼちゃ…1/2個
    9. B なす…5本
    10. B 蓮根…1本
    11. B オクラ…1袋12本
    12. B しいたけ…1袋6枚
    13. B エリンキ…2本(1パック)
    14. B 赤パプリカ…1個
    15. ボーソー米油…適量
    -
    ◆作り方
    -
    1. ☆印で煮干の出汁を作る。
    煮干は頭を取り、背びれのほうから2枚に裂いて腸を取る。
    分量の水に煮干しを入れ、火にかけて沸騰したら弱火にし、10分間乳白色になるまで煮出して火を止める。
    -
    【A】の材料でつゆを作る。
    -
    ①煮干しの出汁に醤油とてんさい糖、かつお顆粒、米酢、鷹のつめを入れる。
    ここまで12分ぐらい。
    冷ましている間に野菜を揚げる。
    -
    2. 【B】の野菜の下準備
    -
    ・かぼちゃは縦に1センチ幅のくし型。
    ・レンコンは5~7ミリの幅の輪切り。
    ・オクラは塩で産毛をこすり取り、茎の部分の皮を包丁で剥く。
    ・ナスは縦半分に切り皮に細かい亀の子に切れ目を入れる。
    ・しいたけは石突を取る。
    ・エリンキは石突を取り縦に4等分に切る。
    ・赤パプリカは1センチぐらい幅のくし型切り。
    -
    3. 鍋底から約3cmまでボーソー米油を注ぎ入れ、170度でかぼちゃを揚げる。
    中までじっくり約2分間火を通す。
    竹串がすうっと通れば良い。
    -
    4. ボーソー米油の温度を200度に上げる。
    ナス、レンコン、しいたけ、エリンキ、オクラ、赤パプリカを30~40秒ぐらいで揚げる様にして一気に揚げる。

    揚げた野菜をペーパーの上でよく油を切る。
    茄子などは油っぽいのでペーパーでふき取ることをお勧めします。
    5. 揚げた野菜を南蛮出汁に漬けたら完成です。
    30分後から頂くことが出来ます。
    夏場は冷蔵庫で2時間ぐらい冷やすととっても美味しく頂くことが出来ます。

    ・カボチャは揚げすぎないようにしてください。
    揚げすぎると崩れます。
    中までしっかり火を通りてください。

    市販品麺つゆの濃度は素麺を入れて頂いても調度良い味に薄めてください。

Recipe (yields 2-3 servings)⁣⁣
🌱Ingredients:⁣⁣
- 1 small head cauliflower, wash & cut into florets⁣ & pat dry with paper towels ⁣
- 1 small green bell pepper, cubed⁣⁣
- 1/2 small red onion, cubed⁣
- 2 cloves garlic - sliced⁣⁣
- 1/4 cup [40g] dry roasted cashews⁣⁣
- 4 dried Thai chilis/red chilis⁣, softened in hot water & drained⁣
- oil for frying & cooking⁣⁣
⁣🌱Batter: ⁣
- 3/4 cup [96g] all-purpose flour⁣
- 1/2 - 3/4 cup ice-cold water⁣
- 1/4 teaspoon salt⁣
- a few shakes of white pepper⁣
🌱Sauce: Mix together 2 tablespoons soy sauce/tamari, 1/2 tablespoon thick dark soy sauce (for color), 1/2 tablespoon sugar & 3 tablespoons Chinese cooking wine/sherry/broth in a bowl & set aside.⁣⁣
⁣
✅Place batter ingredients in a large mixing bowl & stir to combine. The batter should be thick like a pancake batter.⁣
✅Dredge florets in batter, shake off excess & fry until golden brown (temperature: 375F/190°C & I used a small saucepan). Then drain on paper towels.⁣
✅Alternatively, grease a baking sheet pan with oil, place coated florets on the pan. Brush florets with oil & bake at 485F/⁣
250°C until light golden brown for about 20-25 mins, be sure to flip halfway. For the last few minutes, broil to get a crispier texture (oven time varies)⁣
⁣✅To make the sauce, in a heated non-stick pan with 2 teaspoons oil, sauté onion until translucent. Then add garlic, bell pepper, chili & continue to sauté until fragrant. Slowly pour in the sauce & cook to reduce it slightly. Please adjust the sauce based on the cauliflower's size.⁣
✅Finally, add the cauliflower florets, cashews & quickly toss them with the sauce until all incorporated. Serve with rice for a delicious meal.⁣
*Please be sure to dry florets well before coating or the liquid will slowly thin down ⁣

Sharing a satisfying lunch or dinner idea that's simple to put together using pantry spices. 🌿🍃 This seasoning will work with whatever veggies you have in the fridge. Feel free to use any beans 👍 Serve with rice, quinoa or any grain if you don't have tortillas! You can sub vegan sour cream for the guacamole, or omit 💛💜

Veggies: slice 1.5 bell peppers, 1 cup sliced red cabbage, 1/2 medium onion. Add onions to large skillet with 1 teaspoon each chili powder, kosher salt, garlic powder, oregano, cumin, 1/4 teaspoon black pepper and a couple teaspoons oil. After 5 min cooking, add red cabbage and bell peppers. Cook another 5 min w/lid on, stirring occasionally. Add in 1/4 cup corn, cook just until peppers are crisp-tender🌱🌿

Make guacamole. Mash 1 avocado, juice of 1/2 lemon or lime, generous dash of salt, garlic powder and pepper, 2 T finely chopped onion, 1/4 cup chopped tomato, 1 T chopped cilantro (or sub parsley) 👍

Spicy tahini sauce: 2 T tahini (or sub 3 T hummus), 1/4 teaspoon each kosher salt and chili powder, juice of 1 lemon, 1 teaspoon hot sauce (optional), and about 2 T water (add another T water to thin if desired). 🔥🙋

Roast chickpeas while veggies cook. Place 1/2 can drained, rinsed and dry chickpeas on a baking sheet and drizzle with oil of your choice. Toss, sprinkle w/ generous pinch of cumin, chili powder, salt. Toss again, roast at 400 degrees Fahrenheit for 15 to 20 minutes. 🌿🍃🌿🍃

Stopped by what some consider to maybe be the best pizza in Jersey, @delorenzos_tomato_pies near Trenton. Unfair to give a final judgement since the pie wasn’t very hot when I ate it off the back of my truck, but I’ll def return to sample one the proper way. Ordered an original tomato pie, half meatball. I think I’ll skip the balls next time, but otherwise I def was feeling this pie. #pizza

  • So I know I’ve said this a lot of times about salads on here, but this one actually is my favorite salad. I realize massaging your salad probably falls under the playing with your food category, but it’s totally worth it if you want a perfect kale salad. One of the best things about this salad is that you can make a ton of it and keep it in the fridge for about a week! For teachers like me, its the perfect way to take salads for lunch without them getting gross or spending tons of time in the morning.

In a big bowl, take a ton of kale and generously drizzle with olive oil, lemon juice, salt, and pepper. Use your hands to deeply massage the kale for at least five minutes. Taste for salt and lemon. After that you can add in just about whatever you want. I added dried cranberries, goat cheese, green apple, and candied pecans. Let me know what you like to add! 🔅🔅

  • 🍝 SAUSAGE WHITE RAGU w HOMEMADE PAPPARDELLE 🍝 
This is one of my all time favourite pasta dishes 😍 It’s creamy, flavoursome and indulgent. Making your own pasta is so worth the effort here, and it doesn’t take anywhere near as long as you’d expect! 🍝 RECIPE - RAGU ⫸ meat from 6 pork sausages (squeeze it out of their skins) ⫸ 1 large onion, finely diced ⫸ 1 celery stick, finely diced ⫸ 1 small carrot, finely diced ⫸ 3 garlic cloves, minced ⫸ 3 handfuls ish spinach ⫸ 2 tsp fennel seeds ⫸ 2 tsp fresh chopped rosemary ⫸ 1 tsp oregano ⫸ 1 tsp thyme ⫸ 1/2 tsp chilli powder ⫸ about half a cup of white wine ⫸ about half a cup of chicken stock ⫸ about half a cup of single cream ⫸ fresh chilli and parsley to garnish 
Very gently cook the onions, garlic and celery in 1 tbsp oil until they are starting to turn translucent - the goal is to cook them until translucent with no hint of colouring (this may take about 30 minutes). Add the garlic and cook gently for a further 5 minutes. Turn up the heat and add the sausage meat, breaking it up with a wooden spoon as you go. Once slightly browned, add your herbs and spices and cook, continuously stirring, for about 2 minutes. Then add the white wine and cook until about half of the wine remains. Add the stock and cream, cover and simmer on a low heat for 20 minutes. For the final 10 minutes of cooking time, take the lid off to thicken the sauce. Add the spinach when the ragu is nearly ready. 🍝 SERVING

  • 🍝 SAUSAGE WHITE RAGU w HOMEMADE PAPPARDELLE 🍝
    This is one of my all time favourite pasta dishes 😍 It’s creamy, flavoursome and indulgent. Making your own pasta is so worth the effort here, and it doesn’t take anywhere near as long as you’d expect! 🍝 RECIPE - RAGU ⫸ meat from 6 pork sausages (squeeze it out of their skins) ⫸ 1 large onion, finely diced ⫸ 1 celery stick, finely diced ⫸ 1 small carrot, finely diced ⫸ 3 garlic cloves, minced ⫸ 3 handfuls ish spinach ⫸ 2 tsp fennel seeds ⫸ 2 tsp fresh chopped rosemary ⫸ 1 tsp oregano ⫸ 1 tsp thyme ⫸ 1/2 tsp chilli powder ⫸ about half a cup of white wine ⫸ about half a cup of chicken stock ⫸ about half a cup of single cream ⫸ fresh chilli and parsley to garnish
    Very gently cook the onions, garlic and celery in 1 tbsp oil until they are starting to turn translucent - the goal is to cook them until translucent with no hint of colouring (this may take about 30 minutes). Add the garlic and cook gently for a further 5 minutes. Turn up the heat and add the sausage meat, breaking it up with a wooden spoon as you go. Once slightly browned, add your herbs and spices and cook, continuously stirring, for about 2 minutes. Then add the white wine and cook until about half of the wine remains. Add the stock and cream, cover and simmer on a low heat for 20 minutes. For the final 10 minutes of cooking time, take the lid off to thicken the sauce. Add the spinach when the ragu is nearly ready. 🍝 SERVING

Just added the paste to the broth and coconut milk and I had a completely new dish. If you've never had laksa with a really good prawn broth... it's really spectacular, the amount of depth the laksa has is incredible, the spice from the laksa paste comes first but the sweet-savory taste of the prawn broth comes after. Waves and waves of flavor 😌

Buttery flaky pastry dough is wrapped around the fresh fruit for a rustic, free form galette form that’s quite literally easier than pie! Personally, I think whoeva came up with the idiom easier than pie… had never made a carefully crimped edged slit top pie. Just sayin’… 💜🤷🏻‍♀️
And I’m all about embracing the galette’s inner chill! It’s like pie’s easier, more laid back and messier cousin, requiring none of the same precision or perfection to make! 💗😍

Tomorrow I’m releasing a completely FREE mini-workshop on how you can take 10 minutes to turn daily moments into content using the tool in your hands right now: your phone. You do not need fancy equipment. You do not need hours upon hours of time. You need a phone, a window, a subject, and a couple of free apps. That’s it.

I’ve spent most of my career teaching DSLR photography and over the top styling. And if you want to take your content to the next level, those are still amazing tools. But you do not need them to start.
