A guilt-free dessert for breakfast on a weekday ✅ why not?! ⁣⁣

Chia seeds are little power houses💡💥 high in fibre ✔️ protein ✔️ & healthy fats ✔️ ⁣⁣

I’m so glad I took a little time out to prep this last night 👌🏻 I soaked 4 tablespoons of chia seeds in 1 glass of soya milk then added a little honey & cinnamon. I whisked the mix and left it overnight 🌪  I made a quick strawberry compote by simmering some sliced strawberries, a little water, honey & nutmeg 🍓 I left this to cool & then kept in the fridge overnight too. ⁣⁣

I mixed the chia seeds this morning & then layered this with the strawberry compote. I added a little granola for extra crunch and a few fresh strawberries.⁣⁣

I was so impressed with how this turned out & how easy it was to make! I can’t wait to try different combinations 🤩 ⁣⁣

RECIPE — serves 3-4
Ingredients for Matcha Pudding
2/3 cups chia seeds
2 1/2 cups non dairy milk
1/2 cup coconut cream/coconut milk (can also omit and use more milk, but this adds some thickness/creaminess)
4 tablespoons maple syrup or ~20 drops liquid stevia
1 teaspoon vanilla
3 tsp matcha — favorites are @aiyamatcha & @ippodoteausa

Ingredients for Dairy-Free Salted Maple Whipped Cream (per serving)
1/3 cup dairy-free heavy whipping cream (I used @silk) OR coconut cream (if you don’t have coconut cream, use the top thick part of canned coconut milk)
1/2 tsp maple syrup
Pinch of sea salt

Mix together pudding ingredients in a large bowl. Let sit for 30 min on the counter, and then mix again again to make sure there aren’t any clumps. Refrigerate overnight or for at least 8 hours.

To make salted coconut cream, blend or whip cream with maple syrup and salt until it’s thick and fluffy, like whipped cream (I used a handheld electric whisk). Add chia pudding to a jar, and top with cream, along with your favorite toppings like berries, coconut, etc.

Przepisów na szakszukę w internecie znajdziecie mnóstwo, ja po prostu podsmażam ulubione warzywa na patelni (tutaj cebula, papryka, pieczarki) i zalewam wszystko pomidorami z puszki. Dodaje lekko podsmażone tofu i wszystko duszę pod przykryciem. Oczywiście z dodatkiem ulubionych przypraw 🥰 ⠀

Ja osobiście uwielbiam! 🥺 Szakszuka to po prostu takie idealne danie z resztek, można tam dodać dosłownie wszystko 🙈 ⠀

  • Breakfast diaries: 🍄🥗🍅🧅🍄Plating your own food is a good practice. Even when I am eating alone, I make it a point to eat properly, I think, what the ancient sciences in India dating back to almost 5000 years say, is aptly true. What we eat, we become! More on a metaphorical level though, our thoughts, our moods and well being is affected a lot by the kind of food that we take! The recent boom in urban literature in the context of mindfulness speaks about the connection of food to our mental well being! 
Since quite sometime I have started buying organic eggs, I think its more to do with the welfare of hens and how they are allowed to be in more natural environment where they can forage in the open spaces. I think it is more gratifying to know the source from where your food is coming.🐔🐔🐔🐔🐔🐔 Oh!! And soon I will sharing more pictures on the famous red kidney beans ( exclusively known for their aroma and color in the Jammu & Kashmir area, India🥰)

  • Breakfast diaries: 🍄🥗🍅🧅🍄Plating your own food is a good practice. Even when I am eating alone, I make it a point to eat properly, I think, what the ancient sciences in India dating back to almost 5000 years say, is aptly true. What we eat, we become! More on a metaphorical level though, our thoughts, our moods and well being is affected a lot by the kind of food that we take! The recent boom in urban literature in the context of mindfulness speaks about the connection of food to our mental well being!
    Since quite sometime I have started buying organic eggs, I think its more to do with the welfare of hens and how they are allowed to be in more natural environment where they can forage in the open spaces. I think it is more gratifying to know the source from where your food is coming.🐔🐔🐔🐔🐔🐔 Oh!! And soon I will sharing more pictures on the famous red kidney beans ( exclusively known for their aroma and color in the Jammu & Kashmir area, India🥰)

  • Description

Poha(Flattened Rice) is a good probiotic & is easily digestible. It controls blood sugar level, it is low in calories and rich in Iron.

Ingredients:-
500 gms Poha (Flattened Rice)
2 Teaspoon Oil
1 Teaspoon Mustard Seeds
1/2 Tablespoon Peanuts
2 Slit Gren Chillies
3-4 Chopped Curry Leaves
1 large Onion
1 teaspoon Salt or as per taste
1 Teaspoon Asafoetida
1/2 teaspoon Turmeric Powder 
1/4 teaspoon Sugar (Optional)

To add on the Soaked Poha
1/2 teaspoon Turmeric Powder 
1/2 Tablespoon Oil 
For Garnishing
1 cup finely chopped Coriander Leaves
1 Cup Grated Coconut

Directions:- Wash, drain and soak 500 gms of Poha (Flatenned Rice/Rice Flakes)
Leave it aside for 5-10 mins

Meanwhile, heat 2 Tsp of Oil in a kadai,
add 1 tsp Mustard Seeds
Once the Mustard Seeds Splutter, add 1/2 Tbsp Peanuts, 2 Slit Gren Chillies and 3-4 Chopped Curry Leaves.
Then add 1 large finely chopped Onion
Saute for few seconds and add 1 tsp salt (as per taste) and 1 tsp Asafoetida
Mix well and cook until onions turn translucent.

Meanwhile, sprinkle 1/2 tsp turmeric powder and 1/2 tbsp oil to the soaked Poha and mix it well.
Make Sure that your Poha should not have a sticky texture 
Once onions turn translucent, add 1/2 tsp turmeric powder. Then add the Soaked Poha and mix well
(P.S: At this point, you may also add a pinch of sugar if desired. However I have not used sugar in my recipe)
Simmer, mix and cook for 5 mins

Garnish with finely chopped Corainder leaves and Grated Coconut

Serve Hot and Enjoy with Masala Chai

  • I’m bacckkkk, the past 2 weeks I’ve stayed the same weight at weigh in! I haven’t been posting but I’ve been eating ok but not going for many walks! 
But mum and I are back on it with a vengeance! I’m not just gonna get that 1lb to hit my 2stone next week but I am gonna get down closer to that next barrier!

  • Good morning 🌻☀️ ORANGE VANILLA OATS🍊 
This vanilla oats with orange pieces tastes like the summer beginning in a bowl ☀️😻i love adding alpro vanilla soy yoghurt on top of my oats as well! It makes it super creamy! 
Also I added some vanilla casein instead of whey today! It actually makes a great difference in consistency since casein fluffs up your porridge whereas whey makes it more liquidy in my experience 🧐 the basic recipe you can find on my second picture:) I just added some orange pieces and on top some fresh fruit, dried mulberries, peanut granola, mixed nut butter, honey, dried physalis and sesame 🍯🍓

  • This is the best banana bread that I’ve made or tasted ever 😍 I know it’s a big call but seriously it’s sooo goood. The base is slightly darker because I added chocolate protein powder through part of the batter and placed it at the bottom of the baking dish and then poured the rest of the normal batter 👌🏽
I improvised so I can’t exactly share the exact recipe but here is what’s in it approximately:
🌱I mixed about a cup and 3/4 of organic oat flour, coconut flour and whole wheat flour 🌱2 eggs
🌱about 3 tbs of olive oil and 3 tbs of coconut oil 🌱a good pinch of salt 🌱1 leveled teaspoon of baking sofa aluminium free
🌱1teaspoon of vanilla essence 🌱 a pinch of nutmeg because I didn’t have cinnamon 🌱1 cup of smashed banana Ofcorse 🍌 🌱mixed walnuts and pecans 🌱maple syrup and rapadura sugar 
I only have one thing to say about it - it’s the BOMB 🙌🏾😋🙌🏾😋🙌🏾😋
And healthy 👌🏽

1 tsp baking powder⠀
1 cup warm water⠀

Preheat oven to 200C/400F and line a 11x7” baking tray. Add all ingredients to a food processor and blend on high until smooth. If you don’t have a food processor, mix well with a fork in a jug. Pour into prepared tray and bake for 10 mins. Top with sauce and veggies, then return to oven for a further 10 mins.⠀

  • Sesame Crusted Tofu by @gingervegan⠀

For the Tofu:⠀
2 packs of extra firm Tofu (about 560g)⠀
115ml soya sauce⠀
2 cloves garlic, crushed⠀
5 tbsp chickpea flour⠀
1 tbsp nutritional yeast⠀
4 tbsp water⠀
100g sesame seeds - black and white⠀
Oil for shallow frying⠀
.⠀
For the dipping sauce:⠀
Juice of 1 lime⠀
3 tbsp peanut butter⠀
2 tbsp soya sauce⠀
1 tbsp water⠀
2 tsp maple syrup⠀
.⠀
First cut the tofu into small triangles about 1.5cm thick. Place in a shallow dish in a single layer and pour over 100ml of the soya sauce and leave to marinade for at least 30 minutes.⠀
While the tofu is marinating make the batter by mixing together the chickpea flour, garlic, nutritional yeast, 1 tbsp soya sauce and water in a small bowl until there are no lumps.⠀
To make the dipping sauce whisk all the ingredients together until smooth.⠀
Heat the oil in a frying pan.⠀
Pour the sesame seeds onto a plate.⠀
Shake off any excess soya sauce from a piece of tofu, dip into the batter to coat, letting any excess fall back into the bowl. Drop the tofu onto the sesame seeds and turn to coat. Fry until golden on all sides.⠀

  • Purple Potato Gnocchi⠀⠀

1 large purple potato⠀⠀
1/2 cup wheat flour⠀⠀
1/2 teaspoon salt⠀⠀
A pinch of nutmeg⠀⠀
A pinch of black pepper⠀⠀
.⠀⠀
Cook the potato in the microwave about 10-15 minutes until soft. You could also bake it in the oven for an hour. Mash in a bowl and set aside to cool. When the potato has cooled completely, add flour. You want to add as little as possible otherwise the gnocchi will be tough and rubbery. Add just enough flour so you can work with the dough without it sticking everywhere. Divide dough into two balls and roll out into long strips. Using a knife, cut them into half inch pieces. You can use a fancy roller cutter if you have one. Cook gnocchi in boiling water for about 5 minutes, you’ll know they’re cooked when they pop up to the top.⠀⠀

•Add 40g of oats (per person) and some almond milk, and stir regularly
•If you want you can add some protein, here I added Vanilla vegan protein by @alphafoodsde
•After 15min of cooking the oatmeal, serve into a bowl
•Add the apples, cinnamon and your homemade peanut butter as well as any other toppings you like

Roughly chop all ingredients, add cornstarch, sesame oil, soy sauce, white pepper and salt for taste. Fill into Collard Green, wrap and then steam for about 10 minutes. Steaming in a bamboo steamer will keep your veggies looking green and fresh. Serve with the dipping sauce.⠀

A time when the crusades waged and the sleepy town devoured crepe, as a substitute for bread🥖.

Today💁🏻‍♀️, gazillion quirky fillings later, cooks are still fussing over the right way to make it.

The main cause of disagreement is to deliver a perfect version of this paper-thin👌🏽pancake cousin. Cooks are always discussing flipping techniques, temperatures, and the right consistency.

I decode👩🏻‍🔬it all with this simple and easy-to-make recipe. What’s inside my perfect crepes?
.
My mess-free 💪🏼crepe recipe is deliciously nutritious as their made primarily from low-cal ingredients. They get their dose of sweetness from gooey homemade chocolate 🍫 filling and fresh berry 🍓topping.
.
Ingredients:
Serves: 10 Crepes
• 1 cup flour
• ½ tsp salt
• 2 eggs
• 1¼ almond milk
• 2 tbsp. coconut oil + extra for cooking 
Instructions
1. In a medium-sized mixing bowl, combine the dry ingredients.
2. Whisk the eggs and milk in a smaller bowl.
3. Pour the egg mixture into the bowl with the dry ingredients. Add ¼ of the mixture, at a time to get a silky smooth texture.
4. Add coconut oil into the batter. Whisk well.
5. Cover the crepe batter with plastic wrap.
6. Refrigerate it overnight (or at least 1 hr).
7. Heat a large frying pan/crepe pan over medium heat.
8. Grease the pan with oil before pouring ¼ cup of crepe batter. Make sure to spread the batter evenly.
9. Cook for 30 secs to 1 min (or until the crepe looks cooked).
10. Flip over to cook the remaining side (30 secs).
11. Slather your crepes with homemade Nutella and top them with fresh fruits.
📩Tip: Overnight refrigeration keeps the crepe soft.

    My mess-free 💪🏼crepe recipe is deliciously nutritious as their made primarily from low-cal ingredients. They get their dose of sweetness from gooey homemade chocolate 🍫 filling and fresh berry 🍓topping.

    Ingredients:
    Serves: 10 Crepes
    • 1 cup flour
    • ½ tsp salt
    • 2 eggs
    • 1¼ almond milk
    • 2 tbsp. coconut oil + extra for cooking
    Instructions
    1. In a medium-sized mixing bowl, combine the dry ingredients.
    2. Whisk the eggs and milk in a smaller bowl.
    3. Pour the egg mixture into the bowl with the dry ingredients. Add ¼ of the mixture, at a time to get a silky smooth texture.
    4. Add coconut oil into the batter. Whisk well.
    5. Cover the crepe batter with plastic wrap.
    6. Refrigerate it overnight (or at least 1 hr).
    7. Heat a large frying pan/crepe pan over medium heat.
    8. Grease the pan with oil before pouring ¼ cup of crepe batter. Make sure to spread the batter evenly.
    9. Cook for 30 secs to 1 min (or until the crepe looks cooked).
    10. Flip over to cook the remaining side (30 secs).
    11. Slather your crepes with homemade Nutella and top them with fresh fruits.
    📩Tip: Overnight refrigeration keeps the crepe soft.
