  • Woke up craving one thing: French freakin’ toast. 🇫🇷 One of the easiest sweet breakfasts ever. I like using sprouted bread for my version, which makes it a little heartier and gives a little boost of fiber and protein from the whole grains. 🙌🏼 But then of course I make it gooooood with a splash of cream in the batter, a drizzle of maple syrup, and lots of berries! 🍓

  • Weekend breakfast coming in 🔥🙌🏼🤤 Perfect sunny, savory spread to kick off MDW and the start to summer. ☀️

▶️ To make the perfect omelet: heat a non-stick skillet over medium heat. Spray with a little oil (I use @chosenfoods avocado oil) and add veggies/meat of choice until softened. In a bowl, whisk together 2 eggs (I use @vitalfarms of course) and pour into skillet. Allow to cook for 1-2 minutes or until edges become firm, then gently lift edges with a rubber spatula and tilt skillet to let uncooked egg move from center of omelet to bottom of skillet. Once no liquid remains, sprinkle cheese (optional) and fold omelet in half. Enjoy!

  • I let myself sleep in this morning (until 8:30! 🙈) and goodness it was needed! I’ve felt a little exhausted the last two days for no apparent reason. So I turned OFF my phone and just slept. Magical. ✨ But then I woke up ravenous so I was thankful that I prepped some overnight oats this week. Lemon honey might be my favorite OG overnight oats flavor - all the nostalgic summer vibes with every bite. 🍋

▶️ To make, mix:
1/3 cup rolled oats
1 tbsp chia seeds
1-1/2 scoops protein powder (I used @nuzest_usa - discount link in bio!)
1 container yogurt of choice (I used @siggisdairy 4% vanilla)
1/2 cup almond milk
1 tbsp lemon zest
1 tbsp lemon juice

Allow to sit in fridge for at least an hour. Topped mine with blueberries, honey, & @wildwayoflife coconut cashew granola (code KELLY10)

  • Day two of virtual learning intensives are starting with an early stats workshop (v excited… no sarcasm) and a smorgasbord breakfast so I’m sharing dinner from the other night. 😋 Since I’m working my butt off lately and staring at my computer all day, my dinners have to meet a couple standards: easy and delicious. 💁🏻‍♀️ Bonus points if I can watch The Great British Bake Off while eating dinner. This meal definitely met those criteria. 🤘🏼

  • Classic KP breakfast before a morning of virtual learning intensive sessions for my PhD program. 🤓 In normal times, I would be in Charleston with my faculty and my classmates but we’re making the most of it virtually and gearing up for the dissertation phase of the PhD program! 🙈 Very excited but a part of me is definitely nervous about this next BIG phase!

  • Little switch up from my usual breakfast by adding a poached egg to my avo toast. 🍳🥑 Aka the smallest switch up ever but there’s just something about a pretend fancy breakfast. TBH I thought about making Eggs Benedict but then I realized the work involved with hollandaise sauce and we don’t have the motivation for anything that requires more than four steps today. 🤷🏻‍♀️ Step 1: toast. Step 2: avo. Step 3: boil water/add egg. Step 4: smash.

▶️ To poach an egg: bring water to a boil in a medium saucepan, then turn down to a simmer. Crack egg into a bowl to make sure you don’t have any shells and the yolk is intact. Create a vortex in the water by swirling the water and then drop egg into center. Set a timer for 3 minutes. Remove egg with a slotted spoon and pat dry with a paper towel.

Burnt marshmallows vs. golden brown. [Burnt AF]
Cereal then milk vs. milk then cereal. [Cereal then milk as I am not a psychopath]
Flats vs. drums on a chicken wing. [Flats for life]
Ketchup vs. ranch on fries. [Depends on the fry… thin = ketchup, thick = ranch]
Vanilla vs. chocolate. [Vanilla]
The cookie part of an Oreo or Joe Joe vs. the filing. [Cookie which is why Joe Joe slims are superior]

Filled up a cart this week with all the veggies but also cheese, bacon, and baking ingredients. In my house and body, all foods fit and have a place. I feel best when I load up on a big azz salad for lunches, fill a yogurt bowl with all the goods at night after dinner (including a lil Springle Jangle on top), but also enjoy treats like my friend @krolls_korner’s cookies or a glass of velvety red wine. These things are all good for my soul. In the past, restricting the foods that I like made my brain be all-consumed with food. The “I can’t have that,” mindset caused hyperfocus on food and its nutritional worth. And that, maybe, if I ate only certain foods, my own worth as a person was higher. Finding a happy place with food meant knowing that I could eat a salad and also eat a cookie. Or have bread twice in one day. Or do all of the other things that are totally normal to me now but felt very scary and “bad” in the past. Food choices do not indicate your worth. There is no good or bad. Of course, I prioritize food with a high nutritional value because it makes me feel and perform my best. But it’s also okay to bring home and eat the Jangle (although I would argue that maybe the yogurt pretzels and the toffee peanuts are the only legit parts). Pushing myself out of what had become my comfort zone with food (aka only eating things that were deemed nutritionally superior) was the best thing I could have ever done for my quality of life. Because now food doesn’t rule me. And I know I’m worth the most because of what’s in my soul and not what I put into my body.

  • Up close and personal with some old fashioned pancakes this morning. 🥞🤤 Made a small batch which is perfect for two servings plus a pancake for a dog. 🐶 Duke was thrilled. These guys were super easy... plus had a little protein boost from some added collagen.

OLD FASHIONED PANCAKES
. . .
1 cup all-purpose flour
2 tbsp sugar
2 tsp baking powder
4 scoops collagen (I used @vitalproteins - can omit)
Pinch of nutmeg
1 cup milk
1 egg, beaten
2 tbsp melted butter (I used @vitalfarms and holy moly it is good)
1/2 tsp vanilla extract
. . .
Whisk all dry ingredients together in a mixing bowl. Mix all wet ingredients in another bowl. Pour wet mix into dry mix and fold together until well-combined but some lumps remain (don’t overmix!). Heat a griddle or skillet over medium heat and grease with a little butter. Pour batter onto griddle or skillet using a ladle and cook until bubbles form and start to pop, then flip and cook for another minute or two.

  • Switching it up from toast this morning with some crispy breakfast potatoes. 🙌🏼 I LOVE skillet breakfast potatoes but I don’t particularly love that they’re still a little potato-y sometimes since they don’t get as soft as when they’re roasted. 🤷🏻‍♀️ The best quick hack for these is to steam your potatoes in the microwave until fork-tender before adding them to a skillet with some oil, peppers, and your fave spices. 🔥 My faves are definitely smoked paprika, garlic powder, a little mustard powder, and salt and pepper. 🤤

  • The last few months (mostly due to social distancing), I’ve been experimenting with some different, but still super simple, recipes. 💁🏻‍♀️ The other night I threw together this cilantro pesto pasta and it was just TOO good. The southwest flavors meshed together beautifully and the goat cheese? 🤤 Best addition ever. It got all melty and made this bowl extra delicious. Here’s how… 👇🏼

CILANTRO PESTO
-1 bunch cilantro leaves
-2 small jalapeños (I only seeded one because I wanted a little kick and they were small but seed both if you want more pepper flavor with less spice)
-Juice from 2 limes
-1/4 cup olive oil
-4 cloves garlic
-1/2 tsp salt
-1/2 tsp black pepper
-Pinch of crushed red pepper
-1/2 cup raw cashews

Process all ingredients in a food processor until smooth. If you don’t have a food processor, I also had success with my Vitamix and then following up with an immersion blender.

For the pasta, I cooked my favorite pasta shape (duh… farfalle) and then tossed it in cilantro pesto, added some grilled corn (I buy the frozen kind from @traderjoes), sautéed red pepper, grilled chicken that I seasoned with @primalpalate adobo seasoning, and some crumbled goat cheese. Enjoy! ❤️

  • I’m doing my very best to maintain social distancing and limiting my grocery store visits to once per week, which is why I’m super excited about the new #PaneraPantry option. 🛒 One grocery visit per week is a BIG change from normal - when I would pop in to grab an ingredient or two for a recipe I was missing or if I’d run out of something mid-week. Well… two things I go through FAST are bread and yogurt, and I just don’t do well without them. 🍞 #PaneraPantry is an amazing grocery option with fresh baked bread, produce, dairy, and snacks! I ordered via rapid pick up, tapped “I’m here” on the app once I rolled up to @PaneraBread, and my goodies were brought right to my car! 🚗 So convenient and definitely a big help keeping me fueled and happy when life feels a little stressful. I made the easiest little meal with the whole grain loaf, whole milk Greek yogurt, and tomato from my #PaneraPantry run and topped it with some dill and olive oil from home! 🍅 So good!

  • Working from home has made me love lunch again. 🥰 I got really used to eating mini meals throughout the day just out of trying to survive. Like... I felt like I didn’t have time to sit down and take a break but then I’d get exhausted from not taking a break and just chug a bunch more coffee (???). 🤷🏻‍♀️ No, KP. Sitting down for lunch gives me structure in my day. It’s a nice mental break from my computer. I even block out “lunch break” in my calendar so I’m reminded to step away from my desk. I’m doing the same with my workouts. 🏋🏻‍♂️ So I challenge you guys (especially my workaholics, Type 3s, INTJs, etc) to take a freakin’ break - because I can say that while it’s hard to step away from work, it’s SO necessary for optimal brain power. 🧠

  • #Sponsored There’s something nostalgic to me about chicken, mushroom, and rice casserole. ❤️ Definitely comfort food at its finest, but for my version I used a bag of @BirdsEyeVegetables Whole Grain Brown Rice, which is so easy and perfect to add on hand. 🙌🏼 It cooks right with everything else so the flavors meld together beautifully. Such a great meal hack! I have fond memories of requesting a version of this dish from my mom when I was growing up! For this dish, just sauté chicken thighs in garlic and olive oil. Once cooked, add a bunch of sliced mushrooms and some onion, then add a bag of Birds Eye Whole Grain Brown Rice and stir it together until the rice is softened. My passions are critical care nursing, data science, and improving long-term health outcomes through implementation of personalized interventions. 🤓

Regardless, I make sure I have different options for protein, veggies, and complex carbs and I’m making easy meals no matter what. 🙌🏼 My mini turkey meatloaves are one of my favorite easy dinners because they make for a cohesive meal once I add some veggies and potato. And it all comes together in thirty minutes or less. 👊🏼

▶️ Mini turkey meatloaf + roasted green beans + roasted sweet potatoes seasoned with @primalpalate meat & potatoes seasoning

MINI TURKEY MEATLOAF MUFFINS (serves 6)
-1-1/2 lbs 93/7 ground turkey
-1 egg
-1/4 cup chopped onion
-3 tbsp seasoned breadcrumbs
-1 tbsp ketchup (I used @sirkensingtons)
-1/2 tsp dried thyme
-1/2 tsp dried fennel
-1/2 tsp salt
-1/4 tsp black pepper

GLAZE
-1/4 cup ketchup
-1 tbsp brown sugar
-1 tbsp apple cider vinegar
. . .
Preheat oven to 375 F. In a large bowl, mix all ingredients for meatloaf until well-combined. Spray a muffin tin with oil and distribute meatloaf mixture evenly into muffin slots. Place in oven and bake for 15 minutes (jumbo muffins) or 10 minutes (regular muffins). While that is baking, mix together ingredients for glaze. Once first round of baking is done, spread a little glaze onto each meatloaf muffin and then place back on oven for 15 minutes (jumbo muffins) or 10 minutes (regular muffins).

  • You guys know I’m all about the pretend-fancy meals, aka easy meals that look and taste something’ special - especially when there are leftovers involved! 💁🏻‍♀️ #SponsoredByNinja I used my @ninjakitchen Digital Air Fry Oven to make air fried crab cakes with roasted red pepper sauce, roasted broccolini, and roasted baby potatoes. 🦀 I love using my Digital Air Fry Oven to whip up meals with lots of components that way I can plate what I need and then set other servings aside for lunches or dinners the next day - which also makes this meal perfect for feeding the fam or multiple people! 🙌🏼

Step 1️⃣ Slice a red bell pepper in half and spray with oil. Place on baking sheet in @ninjakitchen Digital Air Fry Ovenn on air roast mode at 400 F for 20 minutes.
Step 2️⃣ With ten minutes remaining, add veggies and potatoes. Spray with oil and season as desired. Cook on air roast mode for remaining 10 minutes.
Step 3️⃣ While vegetables are cooking, mix together 12 ounces of lump crab meat, 1/2 tsp old bay seasoning, 1 whisked egg, 6 tbsp panko breadcrumbs, 2 tbsp mayonnaise, a little chopped yellow onion, and a little chopped red pepper.
Step 4️⃣ Form into 6 patties and dredge in flour. Place on air fryer tray.
Step 5️⃣ Remove red bell pepper from baking sheet, flip vegetables and potatoes, and add air fryer tray with crab cakes to @ninjakitchen Digital Air Fry Oven. Switch to air fryer mode at 400 F and cook for 12 minutes.
Step 6️⃣ While crab cakes are cooking, remove skin from roasted red pepper. Blend together 1 tbsp mayonnaise, 1 tbsp Greek yogurt, and skinned roasted red pepper with salt, pepper, and a squeeze of lemon juice.
Step 7️⃣ Plate all components, drizzle red pepper sauce on crab cakes, and serve with lemon and green onions. Enjoy!

  • Yesterday my friend Nick (aka @forkinpancakes) posted some whipped ricotta toast and it’s been on my mind constantly. 🤤🍞 Did Nick’s version and my version, which added avocado and honey for a little sweet and savory action. 💁🏻‍♀️ So good and a nice switch from my usual eggs.

▶️ For poached eggs:
-Bring a pot of water to a boil
-Crack a fresh egg into a small bowl or ramekin to make sure your yolk stays intact and you have no shells (I love @vitalfarms eggs)
-Once water is boiling, turn it down to a simmer and give it a swirl with a spoon to create a vortex. Some people will add vinegar but I didn’t have white vinegar at home.
-Drop egg into vortex and cook for 3 minutes. Remove with a slotted spoon and dab with a paper towel to remove excess water.

  • I have never been that person to pick a salad as my first choice for a meal. However, I’m easily swayed if the greens, toppings, and dressing are on point. Like this one. Butter lettuce? Count me in. Fennel? Yes, please. Cranberry goat cheese? Yup. And a homemade maple cider vinaigrette. Yes, okay, give me it and I will eat it like a koala with leaves hanging out of my mouth the entire time. 🐨🌱

▶️ Butter lettuce + shaved fennel + sliced apples + walnuts + cranberry goat cheese + breaded chicken (just dredged in flour, egg, then bread crumbs and spices then air fried for 20 minutes at 400 F) then a maple cider vinaigrette (serves one):
-1 tbsp olive oil
-1 tsp apple cider vinegar
-1 tsp maple syrup
-1/2 tsp spicy brown mustard (I used @sirkensingtons which is my FAVE)

  • Over the weekend, I got donuts. 🍩 I reallyreallyreally wanted an apple fritter the size of my face, but they didn’t have any. It was a sad moment. So... I decided to make some myself but I was lazy. Individual fritters turned into apple fritter loaf which I have decided is even better because I have great plans to make french toast with this bad boy. 🍎 And it was way easier. Always about keeping it simple. 🤘🏼 The end.

APPLE FRITTER BREAD
2-3/4 cup bread flour
1 packet instant yeast
1/4 cup sugar
1/2 tsp sea salt
1 cup whole milk, warmed to ~110 F
1 tsp vanilla extract
1 egg + 1 egg yolk
3 tbsp butter

FILLING
3 Granny Smith apples, peeled & chopped
3 tbsp butter
1/2 tbsp cinnamon
2 tbsp brown sugar
2 tbsp sugar
Pinch of sea salt

In a mixing bowl, combine half of the bread flour, yeast, sugar for loaf, and sea salt. Add warm milk, vanilla, and eggs and mix until smooth. Add remaining flour and butter, switch to dough hook attachment with hand or stand mixer, and knead for ~8 minutes or until dough wraps around hook and is smooth and shiny (it  will be sticky. Transfer to oiled bowl, cover with plastic wrap, and let rise for 90 minutes, or until doubled in size. Meanwhile, sauté apple mixture in a skillet on medium heat or until sauce is thickened and not watery around apples (feel free to add a sprinkle of cornstarch if yours stays too watery). Allow to cool. Once dough is risen, flour a clean surface and roll dough into a rectangle, about 1/4 inch thick about the size of a baking sheet. Spread apple mixture along dough going lengthwise, then fold other half of dough over the top (think: hot dog style fold, not hamburger). Cut filled dough into strips both lengthwise and widthwise until you have small chunks of dough mixed with cinnamon apples. Line a loaf tin with parchment paper. Place dough/apple chunks in loaf tin and cover with plastic wrap and let rise for another 30 minutes. Preheat oven to 350. Once dough is puffy, place in oven for 30 minutes, then tent with aluminum foil and bake for another 30 minutes. Once cool, feel free to glaze however you’d like! Enjoy!

  • Loving the w[hole] foods this weekend. Big ol’ mixing bowl salads and donuts and brown rice bowls and bagels and grilled asparagus and probably ice cream once I finish my dissertation proposal tonight. 🍩🥗🥯🥦 Not in the name of “balance” but in the name of eating food that I enjoy and that make me feel GOOD. 🤸🏻‍♀️ Picked up some local bagels yesterday from my fave baker and made THE BEST breakfast this morning. Got some Duke cuddles. 🐶 The sun is shining. ☀️ Now time to tackle some tough questions posed to me by my stats professor/committee member that I currently don’t know the answer to. 🙃 Oh, and I’m going to attempt to make homemade apple fritters today. Wish me luck. 🍎

  • Even though I technically have restructured time now where it LOOKS like I’m less busy, I definitely feel MORE busy as the semester is winding down. 😅 Between finishing my dissertation proposal (and having a last minute data collection plan adjustment... which will help me MAJORLY in the long run), supporting my Patho students, and coming up with activities for my Med/Surg students, my brain is like “wtf.” 🧠 BUT... means to an end and I’m definitely thankful for summer break happening soon, where I’ll probably be re-coding raw data until my eyeballs pop out of my head. 👀😂 Until then... getting through these busy days by keeping meals simple as always! This loaded yogurt bowl was a dream.

  • I’m definitely a texture and temperature person when it comes to food. Like... I prefer hard boiled eggs when they’re still warm so I never prep them in advance. I used to microwave deli sandwiches because I couldn’t handle cold lunch meat (I’ve grown out of this). If it’s slimy and I’m not expecting it, it’s a no from me. Other than that, I don’t consider myself a picky person. Except for beets and kale. Won’t touch them with a 10 foot pole. 🙅🏻‍♀️

  • Currently on hold with USPS trying to figure out where the heck a package is... and 25% of the US is doing the same so imma be here a while. 🙃😭 At least I have a beautiful breakfast spread to keep my hopes high, right?   • Wednesdays are the longest days. 😴 8 hours of teaching clinical plus an hour and a half of teaching patho followed by hopefully (🤞🏼) some homework is a little rough. 🤯 Yesterday I was telling some friends that my stress level is at an all-time high and I feel like something has got to go. It’s a weird part of my life because there’s not much that can give right now sooo.... 🤷🏻‍♀️ We’ll figure it out. We always do. But until then send good vibes for my sanity. Also send coffee. And maybe wine.

  • Last day of my PhD semester and I have a lot to wrap up between that and work. 😅 Big shout out to hot coffee and easy breakfasts this semester because my brain has been drained of the ability to focus on anything but school and pathophysiology and nursing for the last 15 weeks. 🤦🏻‍♀️ Thankful that this semester is almost over and that the hard work I’ve done will pay off starting next semester. But while I work… loading up on some slices and all the caffeine to get me through the day. ☕️
