  • I promise I eat meals besides breakfast. I tried something new, a lentil pasta with a yogurt pesto sauce. Served with some salmon and a side salad. The lentil pasta is super filling and I will be purchasing again. It made a massive batch so I’ll be eating this for the next few days. .

  • Progress , not perfection.... I may not have seen a huge change in the scale .... July 2019 I was 207 lbs and now I’m 174... this is a 33 lb difference and I am absofuckenlutely proud of this !! Waiting for some mini fencing to hopefully 🤞 keep my dogs out of the veggie garden. @thesoulfullproject is an amazing “buy one, give one” company and is so so yummy! This recipe is on the back of their “Four Grain Hot Cereal” (but I changed a few things)

What you’ll need:
- 1 3/4 cup @thesoulfullproject Hearty Grains & Seeds Hot Cereal
- 1/2 cup Almond Butter
- 1/6 cup honey
- 1 tsp vanilla extract
- 1/2 cup chopped cherries
- 1/4 cup chia seeds
- 1/4 cup chopped almonds

you can find @thesoulfullproject products and Wegmans!

To make:
- Mix all ingredients
- put in a square pan or mini muffin pans and press down
- put in fridge for 40 mins
- keep refrigerated

It’s GRILLING season my friends!🥰 Took advantage of the beautiful weather by making these marinated teriyaki chicken kabobs!🍢 Hope everyone enjoys the lovely weather & this delicious recipe!☀️🍴🍅🥒🌶🍗

Ingredients: 
2 chicken breast
2 tbsp Lemon juice
1 tbsp Ginger grated
1 tbsp Garlic grated
4 tbsp Soy sauce
2 tbsp Teriyaki sauce
1/2 tsp Black Pepper
1/2 tbsp Worchester sauce

Instructions
Cut the chicken into cubes. 
Add all sauces into a bowl and put the chicken into it. allow to marinade for at least 1 hour.
Skewer chicken and grill on each side for about 4 minutes.

  • I came across a recipe for oil down but obviously couldn't have the breadfruit or other provisions. I decided to try it out with a bunch of veggies I had to finish from last week's shopping and pigtails that weren't used from this morning's pickle.

Sooo...this is what I came up with. It was very hearty and filling and tasted like something my granny would make...a cook up of sorts. It had the flavour of oil down (Granny used to make this) because of the coconut milk but reminded me alot of a gumbo or okra slush because of the okra texture. Next time I'll do it without the okra and see how it comes out.

Yup...that was lunch. Pigtails, cauliflower, cabbage, okras, spinach, coconut milk and tons of ginger and garlic 🥥🍃

Recipe: ⠀
1 banana, mashed (~90g), 1 tsp apple cider vinegar ⠀
80g chickpea flour⠀
55g rice flour ⠀
1/3 tsp baking powder⠀
1/4 tsp baking soda⠀
150ml soy milk (or other🌱) Sweetener of choice ➡️ Mix all ingredients. Depending on the flour you use, you might need more plant milk. Bake the pancakes in a well coated pan with a little bit of oil( optional). Serve with fillings/toppings of your choice!⠀
