  • CARAMEL CUPCAKES 
INGREDIENTS (Cake):
125g Butter (soft)
2 XL Eggs (59g ea)
2 tsp Baking Powder
1/2 cup + 2 TBS Milk (156ml)
3/4 cup Granulated Sugar (158g)
1/2 tsp Vanilla Essence/ Extract
1 1/2 cups Flour (225g)

METHOD (Cake):
•Beat butter until creamed, add remaining ingredients and beat for 3 minutes.
•Fill 3/4 way into muffin cups, in a muffin pan, •Bake for 12-15 minutes. Cool.

INGREDIENTS (ganache filling):
1/2 cup Double Cream (125ml) 
80g White Chocolate (chopped)

METHOD (ganache filling):
•In a medium mixing bowl place chocolate nibs. Set-aside. •In a saucepan, heat cream on low-medium until simmering.
•Pour cream over chocolate and leave to stand for 3 minutes.
•Using a spatula, stir until smooth and leave to cool to room temperature. 
INGREDIENTS (topping):
1/2 can Caramel Treat Topping (180g)
1/2 cup Whipping Cream (125ml)
2 TBS Icing Sugar

METHOD (topping):
•Whisk caramel topping until smooth. •Freeze cream for 10 minutes. In a medium bowl, add cream and sugar, and whip until firm.  Peaks should form when whisks are lifted.

ASSEMBLY:
•Using an apple-corer, remove a small portion from the top of each cake. •Pipe a spoon of ganache into each cake. •Spread/ pipe caramel onto each cake top.
•Pipe cream around the rim of the cakes. •Serve immediate or store refrigerated in an air-tight container.

Honestly, this cooking trip from the North West Frontier Province to Pakistan to Delhi made me smile throughout the cook. 
I had a half Kg of chicken, half a container of curds, and one capsicum that I wanted to use up. Marinated the chicken with curds, garam masala and some ginger-garlic paste. On a high flame, stir fried 2 onions, 2 tomatoes, and the capsicum with some bhuna masala. Added the marinated chicken and 2 fat, slit green chillies and cooked till done, using very little water. Garnished with julienned ginger, as chicken karhai usually is. A mishmash of 4 dishes resulting in one satisfying dinner. .

  • Több mint egy éve a fejembe vettem már, ám eddig mást dobott az élet, így nem volt időm megvalósítani. Viszont az elmúlt pár hónap, ahogy sokaknál, úgy nálam is sok mindent átírt, többek között magával hozta azt, hogy mostantól teljes gőzzel a saját projektjeimmel, receptekkel és na és saját gyártású videókkal is tudok foglalkozni! ❤️ Az elmúlt pár hétben szorgosan tervezgettem, aztán építettem a konyhát és végre lefogott az első videó is. Pontosan négy éve, szintén egy bodzaszörp volt az első saját videóm és gondoltam legyen meg a keretes szerkezet, úgyhogy elkészítettem ennek az új kiadását.

There’s a silly party game in Japan called bamboo shoot nyokki. Nyokki isn’t gnocchi but a onomatopoeia of something growing. Anyways, I found gnocchi in the store and this stupid idea lead to a good dish🎊店でニョッキを見かけて思いついた料理。下らないアイディアから美味しい料理ができました。

  • My favorite memory from those daily commutes between Daghenem and Brentwood in East London 🇬🇧 back when I was on assignment w/ British Telecom was stopping at this little spot for fish and chips.  15 yrs later and I still haven't perfected the recipe but I'm getting close.  Beer Battered and spiced with curry à la Gordon Ramsey.  Homemade tartar sauce and hand cut potatoes.  #menwhocook still #livingthequarantinedream even though my state is open.

  • Kaadedi pachadikanarham ani... kammaga kothimeera senagkkaya pachadi chesanu. This coriander and peanut chutney tastes even better when made with organic leaves - the kind you get in villages. The strong aroma of coriander paired with toasted peanuts elevates the chutney taste to another level and also gives a nice nutty flavour. Just relish with some hot rice and ghee. Have you drooled yet 😉

What you need:
Fresh Coriander Leaves - 2 packed cups
Peanuts - 1/4th cup
Tamarind - a small ball
Green Chillies - 6 or 7 (chopped)
Garlic - 5 pods
Mustard Seeds - 1/2 tsp
Urad Dal - 1/2 tsp
Channa Dal - 1/2 tsp
Jeera - 1/2 tsp
Methi Seeds - 1/4 tsp
Hing - a pinch
Sugar - 1/2 tsp
Salt to taste
Sesame Oil- 2 tbsp

How you make: 
Heat oil in a pan. Add mustard seeds, urad dal, channa dal, peanuts, jeera, methi seeds and hing. Let it all sauté for a minute. Now add tamarind, green chillies and keep sautéing for another minute or two. Put in the coriander leaves, add salt, sugar and mix well. Let it all cook on medium flame for about two mins. Make sure you don’t burn it. Turn off the gas, cool it and make a coarse blend in the grinder. There’s no need to add any water as the consistency should be semi dry. Pachadi is ready to eat and also can be stored in the fridge for a couple of days

PS : Nothing to beat the taste when you make such chutneys in a mortar and pestle

  • Pizzithini. Naaaku bhi aata hai fancy cooking 😋Cravings lead to makings lead to eatings lead to aanandam. With a little nudge and expert advice from @malabartearoom, I dared to make the base with yeast. Turned out quite good for an amateur attempt. Toppings ki toh wallah. Put off whatever I had at home. Though my expert judge/critic Miss N rolled eyes at the white sauce I made from a packet, she gave extra five marks for presentation. So all is well in the tummy 😍

  • Menthaaku aalugadda maamsam. Aha!!Growing up, one of the best ways to incorporate veggies in our diet was to add them in mutton. Amma made sure she put in a variety of vegetables into the mutton curries and that’s how we learnt to appreciate both the tastes. Here’s one such recipe where I use potatoes and fresh methi leaves with mutton to make a delicious gravy. Mutton Madhuram

What you need :
Mutton : 1 kg (curry cut)
Potatoes : 5 (peeled and cut in big cubes)
Fresh methi leaves : 1 cup
Onions : 2 (finely sliced)
Tomatoes : 2 (chopped) 
Milk : 1 cup
Oil : 2 tbsp

For the wet masala : 
Poppy seeds : 1 tsp
Grated coconut : 1 tsp (can use dry or fresh)
Dry red chillies : 5

Soak the wet masala ingredients in a cup of water for about 2-3 hours and grind into a smooth paste. Add half an onion for good consistency

For the dry masala :
Cloves : 6-8
Cinnamon : 1” stick
Fennel seeds : 1 tsp
Marathi moggu : 1
Green cardamom : 1

Make a coarse powder out of these.

For the marinade :
Chilli powder : 1.5 tbsp
Ginger garlic paste : 1.5 tsp
Turmeric : a pinch
Jeera powder : 1/2 tsp
Dhaniya powder : 1/2 tsp
Lemon juice : 1 tbsp
Salt to taste

How to make :

Mix mutton with the marinade ingredients and keep aside for at least 2 hours or overnight. Longer the better. Heat oil in a pressure cooker. Sauté onions and dry masala for about 2-3 mins. Add the marinated mutton and sauté well on medium flame for about 6-8 mins. Now add tomatoes, potatoes, methi leaves, wet masala and let it all cook till oil surfaces and raw smell goes away. This should be for about 7-8 mins. By now it’ll be very aromatic. Add one and a half cup of water, milk and pressure cook the mutton for 3-4 whistles. Let the steam off, check for desired gravy consistency and serve hot with rice/rotis or even dosas
