  • One of my absolute favorites.. It's spicy, it's soft, it's juicy and it all comes down to a meal that can be made in maximum 45 minutes.
. 
Serves - 4

Method:
~Soak the soya chunks overnight or for at least 6-8 hours.
~Squeeze out the excess water.
~Now coarsely grind the chunks to a granular texture.
~In a heated pan, take some oil.
~Add chopped chilli and ginger and sauté.
~Add chopped onions and cook until translucent.
~Add tomatoes and cook until mushy.
~Add Capsicum and mix well.
~Now add turmeric powder, chilli powder, coriander powder, asafoetida powder and garam masala. Mix well.
~Now add salt and coriander leaves.
~Add in the ground soya chunks and mix well.
~Let it sit for 2-3 minutes.
~Stuffing is ready.
~In a bowl, take wheat flour.
~Add crushed Ajwain, onion seeds, salt and oil.
~Add Besan for an improved texture of paratha.
~Slowly start adding water and knead well to form a soft dough.
~Roll out a portion of the dough to the size of a puri.
~Fill in the cavity with at least 2 teaspoon of the stuffing.
~Now bring the edges together and seal.
~Place the dough on a rolling board and start pressing down the stuffing gently with your fingers. This helps to spread the stuffing evenly.
~With very little pressure roll out the paratha.
~In a heated tawa, place the paratha and start roasting on both the sides on a medium flame.
~Apply ghee on both sides.
~Paratha is ready when you see rich brown spots on both the sides.
~Serve with fresh yogurt and achar!

Ingredients for the Dough

2 cups Wheat Flour

1 teaspoon Salt , as required

Water , to knead the dough

Oil or Ghee , for cooking

Ingredients for the Filling •Potatoes:1/2 kg Boiled and mashed •Onion: 1 small omelette chopped •Cumin & coriander seeds ( crushed)1 tsp each •Red Chilli Flakes and salt: To taste •Cilantro and Green Chilli: chopped

Method: ▪︎To begin making the Aloo Paratha Recipe, first we will make the paratha dough. In a large bowl add in 2 cups of wheat flour and some salt. ▪︎Use your fingers and stir in the salt into the flour. Add water a little at a time and knead to make soft, pliable paratha dough. Knead paratha dough for a couple of minutes until the dough is smooth and elastic. ▪︎Mash potatoes and mix all the ingredients well. ▪︎Take two small size  the knead dough 
And fill the potato mixture in between the dough,press firmly. ▪︎Roll the stuffed dough and make it like a round roti ▪︎Use Ghee/oil and cook both side until it is cook and done.

Serve Aloo paratha with Raita,  Achar and Chatni.

  • ~ CHEAT CINNAMON ROLLS ~

I’m back with another sweet treat and these little beauties are just amazing 🙊 Fast, simple and so unbelievably easy, they’re the perfect way to cheat your way to freshly baked cinnamon rolls. I used @shanafoods parathas which are amazing just as they are but they take on a whole different personality in this really fun recipe. A cross between bread and pastry, these parathas become a little crisp on the outside and deliciously soft and doughy on the inside when baked in the oven. Perfect! Recipe is below and in my highlights. Enjoy 😘
🍃
Makes 6. You will need:
6 @shanafoods original parathas, room temperature
100g unsalted butter
🍃
For the sugar topping:
3 tbspn brown sugar
1 tbsp cinnamon powder
🍃
For the frosting:
75g unsalted butter, room temperature
75g plain cream cheese
1 tbspn icing/powdered sugar
2-3 tbspn milk
1 tspn vanilla extract
1 tspn fresh lemon juice
🍃
1. Spread 1/2 tspn butter evenly across a paratha. Sprinkle 1.5 tspn of sugar over the butter and lightly pat it with the back of the spoon so it adheres to the butter.
2. Roll the paratha as tightly as possibly (but not so tightly that you rip the dough) and create a long Swiss-roll-type log.
3. Now, starting from the end of the log, roll it again like a Swiss roll and lightly press the roll together at the point where the end of the log touches the main body of the dough so that it’s tightly held together and can be picked up without any of the dough hanging off. Place it in to a lined baking tray. 
4. Do the same for all parathas and sit them snugly next to each other in rows in the baking tray. There should be few gaps between the rolls. Melt 2 tbspn of butter and brush all exposed areas of dough generously. Bake at 180°C for 45-55 mins or until the dough becomes cooked and golden.
5. While the rolls bake, make the frosting by beating all ingredients together to form a mixture with dripping consistency. It should be thin enough to pour but not so thin that it runs off like water.
6. When the rolls are baked, removed from the oven and pour over as much (or as little) frosting as you like. Allow to cool a little before digging in!

A cross between bread and pastry, these parathas become a little crisp on the outside and deliciously soft and doughy on the inside when baked in the oven. Perfect!     Makes 6. You will need:
    6 @shanafoods original parathas, room temperature
    100g unsalted butter

    For the sugar topping:
    3 tbspn brown sugar
    1 tbsp cinnamon powder

    For the frosting:
    75g unsalted butter, room temperature
    75g plain cream cheese
    1 tbspn icing/powdered sugar
    2-3 tbspn milk
    1 tspn vanilla extract
    1 tspn fresh lemon juice

    1. Spread 1/2 tspn butter evenly across a paratha. Sprinkle 1.5 tspn of sugar over the butter and lightly pat it with the back of the spoon so it adheres to the butter.
    2. Roll the paratha as tightly as possibly (but not so tightly that you rip the dough) and create a long Swiss-roll-type log.
    3. Now, starting from the end of the log, roll it again like a Swiss roll and lightly press the roll together at the point where the end of the log touches the main body of the dough so that it’s tightly held together and can be picked up without any of the dough hanging off. Place it in to a lined baking tray.
    4. Do the same for all parathas and sit them snugly next to each other in rows in the baking tray. There should be few gaps between the rolls. Melt 2 tbspn of butter and brush all exposed areas of dough generously. Bake at 180°C for 45-55 mins or until the dough becomes cooked and golden.
    5. While the rolls bake, make the frosting by beating all ingredients together to form a mixture with dripping consistency. It should be thin enough to pour but not so thin that it runs off like water.
    6. When the rolls are baked, removed from the oven and pour over as much (or as little) frosting as you like. Allow to cool a little before digging in!
