  • Playing with sourdough 😍I love the idea of naturally leavened bread and pizzas. There is an art to it, that's for sure. 😬

I am on the sourdough train for a while to see if I can get the hang of it as I find it really rewarding when something just works when it comes to together.

This was a pretty quick dough and could do with a lot of work but it was actually great to stretch (my best so far)

This is 62% hydration, with 4 hours at room temp while folding and resting.
Then into the fridge for 14 hours before being balled and left to get back to room temp for another 4 hours.

My second pizza for the day was not as successful as this one! 😆

I used my 100% Rye starter and 00 flour, I am guessing it's the starter that is giving the crust that colour?

I have a 48 hour ferment in the fridge so will check that out tomorrow and compare! 😄

  • Homemade pizzas | Take 2 - Gluten free, dairy free, sugar free and vegan base) 🍕⁣⁣

I got most of the delicious ingredients from our local Italian supermarket  @kingandgodfree 🧀⁣
⁣⁣
Base Ingredients: ⁣⁣
⁣⁣
2 tablespoons white chia seeds ⁣⁣
⁣⁣
1/2 cup of white quinoa ⁣⁣
⁣⁣
3 tablespoons of buckwheat flour ⁣OR spelt flour ⁣
⁣⁣
1.5 teaspoon of baking powder⁣
⁣⁣
Pinch of sea salt ⁣⁣
⁣⁣
1st Pizza Toppings:⁣
⁣
1/2 cup of tomato paste / homemade sauce⁣⁣
⁣⁣
1 handful of basil leaves ⁣⁣
⁣⁣
4 cherry tomatoes sliced ⁣⁣
⁣
1-2 tablespoons of sliced kalamata olives⁣
⁣⁣
Fresh buffalo mozzarella sliced OR vegan cheese ⁣
⁣
Sprinkle of chili oil (chili infused olive oil) ⁣
⁣⁣
Steps:⁣⁣
⁣⁣
1. Preheat oven to 220 degrees, line a pizza tray with baking paper. ⁣⁣
⁣⁣
2.  Combine chia seeds and 1/3 cup of water, in a bowl. Stand for 10 mins to thicken. ⁣⁣
⁣⁣
3. Place quinoa, buckwheat or spelt flour, baking powder, salt, 1/3 cup water and chia mixture in a blender/NutriBullet.  Blend until smooth, you may have to stop the blender and mix a couple of times if it is not mixing  smoothly. ⁣⁣
⁣⁣
4. Then smooth the mixture over the baking tray and flatten down into what looks like a base.  Pop in the oven  for 15 minutes, or until golden brown.⁣⁣
⁣⁣
5. Take base out of oven, put toppings of the base and pop it back in the oven to bake for an extra 10 mins . ⁣⁣

The pizza should come out crunchy and delicious! I eat these at least once a week at the moment as they’re made with ingredients that are kind to your body and shouldn’t leave you feeling bloated and heavy.

  • More often than not, if I’m looking to make a lazy pizza, I’ll just follow my focaccia build and process all the way up to the bit where I’d dimple, but instead will just top and bake. 
Simple ingredient of the best quality I can find is often my toppings of choice. If I’ve spent all this time trying to make an amazing flavoured base then I don’t want to hide it with super strong and dominant flavours that will mask it. 
This was tomato, F.d.L., and basil... and extra olive oil.

  • Achari Naan Pizza - ode to my father’s Indian style pita pizzas I happily ate, always sitting on edge of the dining chair, chomping slowly so as to keep the feeling of euphoria as long as I could. Method is under “Naan Pizza” on my highlights.

It was the 90s, Tecnotronic was huge on the radio, people wore bicycle shorts without owning bikes, brown toned lipsticks and eye shadows was all the rage in women’s makeup, and my father was newly a single dad with the responsibility of feeding his daughter, a role he took on without complaint and with creativity.

THE TOPPINGS - there’s a bit to explain:

This was made with store-bought naan, coriander and mint chutney, Dabla Keri (a spicy Gujarati oil pickled mango achar - Dabla means pressed, because the spices are stuffed and pressed into the small mangoes, and Keri means mango. Thank you @theurbancilantro for the explanation), sweet mango chutney, plain yogurt, lightly charred red onions and red peppers, fresh cilantro/coriander, Kashmiri chili powder (a mild chili powder that’s intensely red in pigment - you can buy it at most Indian grocery stores), and Nigella seeds, known as kalonji in Hindi, kalo jeere in Bengali. Nigella seeds look like black sesame seeds, they give off a lovely smoky onion flavour.

The flavours were complex, spicy and slightly smoky with bursts of sweet and bright freshness.

Thanks to @lilybubbletea’s beautiful Indian fusion pizza she made from scratch the other day, I couldn’t stop thinking about my father and his pita pizzas.

So I called him up and asked him for a review of his favourite toppings and decided to put my own spin on it, one I think he’ll love once it’s safe to be together again. He would definitely add a big sprinkling of fiery green chilies, being Indian and also part dragon.

Most immigrant Indian households, not that I can confirm statistical data, probably have a version of this kind of pizza made with one of the many flatbreads native to our culture(s). My non-Indian husband called this “orgasmic” and that he’d trade his beloved Kentucky Fried Chicken for this any day.

To which I said, “this beat is, this beat is, this beat is technotronic”, right before the mic drop.
