We are a really big fan of biryani and we try to a make it in a different way everytime. This is the easiest and the quickest way to make biryani. 
Marinate the chicken for minimum of 1 hour but if you marinate it overnight it the chicken will absorb all the goodness making it even juicer and tender.

  • It’s been tough motivating myself to cook recently, but a trip to Trader Joe’s inspired me when I saw all the fresh summer produce! Fresh corn, cherry tomatoes, and red potatoes tossed in olive oil, garlic powder, parsley flakes, salt, and pepper and pan roasted at 415 degrees for 20 minutes (I removed the tomatoes a few minutes early so they wouldn’t get too mushy). Pre-marinated balsamic rosemary chicken breast from Wegmans, grilled in a skillet. Finished off with leftover baguette from Panera. 🌽🍅🥖

  • I did a lot of cooking yesterday. 1) Riffing off of Mark Bittman’s Chickpea Tangine with Chicken and Apricots on jasmine rice 2) Ham and Cheese Kolaches (that’s what we call ‘em in Texas), half to freeze for later 3) the daily boule, sourdough edition 4) Toffee Bars.

  • After a deliciously decadent meal we had a go at a simple lunch today by whipping up some homemade hoummus. .

400g carton drained chickpeas
80ml olive oil - extra virgin
1-2 fat garlic gloves, crushed
3tbsp tahini
Chopped coriander and chilli flakes to serve
Flatbread or pitta to mop it up 😍

Blitz the chickpeas, oil, garlic and tahini in a blender, pop in a bowl, warm through some flatbread and off you go. Sooooo tasty! .

I haven’t had meat in two months due to some stomach issues I was having and my overall health was just poor. So I decided to eat more plant based with seafood. Then I was speaking with my cousin and she suggested to try some plant based meat. So I did! I aired fried two plant based chicken tenders and sprayed a little bit of olive oil so it’s crispy! I added some lemon, pepper and olive oil to the spring mix and arugula. I topped off the salad with some sesame seeds! 
Very simple, but tasty! The two plant based chicken tender strips were only 90 calories! The brand is gardein. I will learn to make some of this  plant based meat on my own in the future but wanted to share this with you all!  I love my seafood and will continue to eat it but love trying new things too!

  • My oldest daughter has been learning in social studies about Egypt. This past week, she read about what Egyptians eat and was curious about kofta kebabs. So we made a version of them with what we had on hand: ground turkey, onions, parsley, mint, chives, salt, cinnamon, allspice, paprika. Didn't have skewers (or a grill) so pan fried as patties. These were GOOD. Also made a riff on @mikesolomonov's chopped salad from Israeli Soul (subbed chives for the onions because my youngest doesn't like raw onions). There were leftover pita and tzatziki, too. Bringing full circle, shout out to all the teachers making the best of a bad situation right now. The fact that my daughter is still learning and engaged considering the circumstances is a testament to their hard work. .

  • Made the pear, chocolate, and almond cake again - I love the process of perfecting a recipe. Making little changes until you have the perfect result. This one was better than the last, but I’m still looking for a stronger pear flavour. Finding it difficult to add more pear because it changes the consistency of the batter too much and it sinks! Any suggestions? I’m thinking maybe a dash of pear liqueur next time.

  • Today was my mom's birthday...what better than cooking her favorite chicken rezala at home only and yet taste like having in a restaurant 🥰
U too can do this....marinate the chicken pieces in yoghurt ,gingergarlic paste and salt for at least half n hour. Then add oil in the pan and fry the marinated chicken pieces lightly .Add bay leaf,whole garam ,some red chillies and then the paste of onion,poppy seeds,cashew and melon seeds .Cook in low to medium flame.Add back the chicken pieces and cover for 5mins .Add half cup of warm water and bring to boil ,when oil starts separating, add fresh cream and u r ready serve restaurant style chicken rezala and delight ur near ones♥️♥️♥️

  • Gluten free, dairy free Potato Gnocchi
As a newly #glutenfree #dairyfree lean PCOSer, one thing I’ve missed is a hearty pasta meal. Last year for my #anniversary we had a Chef from #Cozymeal teach us to make #gnocchi and I was craving it, so, et vóila! Goes great with any sauce. Pictured here with a vegan cashew creamy marinara

Ingredients:
1-2 medium potatoes
Gluten free #cup4cup all purpose flour 
Egg 
Salt

Directions:
Cook potatoes until fork tender. Using a potato ricer or your fork, break up until very fine. Incorporate egg and add salt to taste. Add in flour, a tablespoon at a time until you’ve created a dough. Break off small sections of dough and using your hands, roll into ropes of dough. Cut off 1-2 cm pieces and coat with a fine dusting of flour (so that there is no sticky dough coming through). Leave gnocchi to dry for 10-15 minutes. Add a few at a time to salted, boiling water. Toast lightly in olive oil before adding desired sauce. Enjoy!

  • COOK peach and nectarine pavlova. PLEASE READ ⬇️ In the spirit of @bbcgoodfood ‘s #bakebecauseyoucan campaign to raise money for @bbccin and @comicrelief I’ve whipped up an experimental pavlova that I’m very pleased to say worked out an absolute dream! (It better had as it took me two days of mishaps and failed experiments to complete 😅).

I trialled two methods of meringue - the classic way and a more convoluted way that didn’t quite go to plan but I was left with some marshmallow-Esque pieces that I scattered on top. I whipped up an orange blossom cream, infused honey with peach and lavender for a drizzle and topped with fresh nectarine and cinnamon sugar grilled peaches. It all came together as a delightfully sweet but fresh tribute to the British summer garden, with lovely floral notes from the cream and lavender peach honey. Perfect for this weather! .

  • I’m not sure I’ve ever made French Toast for myself as an adult. But, nothing sounded good this morning, and I was feeling like some comfort food. I have no idea if I even made it “correctly”, but it hit the spot. I scrambled an egg, added a splash of milk and a nice dash of cinnamon. Dipped some plain old wheat bread in the egg mix, and cooked it on the griddle.   • One-Pan Curried Apricot Chicken Bake 🤯 🤤⁠

Serves 4⁠

INGREDIENTS⁠
⁠
½ cup apricot jam⁠
¼ cup chutney⁠
2 tbsp mild curry powder ⁠
1 packet white onion soup powder ⁠
2 cups warm water ⁠
2 packs (4 thighs each) Grain Field Chicken Thighs, cleaned and dried⁠
4 medium potatoes, cut into smaller chunks ⁠
2 peppers, sliced into thick chunks⁠
2 carrots, cut into thick rounds⁠
½ onion, cut into large chunks⁠
Salt and pepper, to season ⁠
⁠
Serving suggestion: ⁠
Basmati rice ⁠
Fresh coriander sprigs⁠
⁠
METHOD⁠
⁠
1. Preheat the oven to 180℃ and grease a baking dish. ⁠
⁠
2. In a large mixing bowl combine the apricot jam, chutney, curry powder, white onion soup powder and warm water and stir until smooth. Allow to cool. ⁠
⁠
3. Add the chicken thighs to the prepared mixture and ensure the sauce to coat the chicken. *Chef’s Tip: For a very flavourful dish, allow chicken to marinade in the sauce for 1 hour to overnight. ⁠
⁠
4. Remove the chicken from the sauce and place in a baking dish, skin side up. ⁠
⁠
5. Place the potatoes, peppers, carrots and onions around the chicken thighs. Pour the sauce over all the ingredients. ⁠
⁠
6. Season to taste with salt and pepper and bake, covered with foil, for 40 minutes, until the juices from the chicken run clear and the vegetables are tender. Remove the foil and allow to cook for 20 more minutes until the chicken skin crisps up slightly and turns golden brown.⁠
⁠
7. Garnish the apricot chicken curry with fresh coriander sprigs and serve with freshly cooked Basmati rice to soak up the sauces. ENJOY with the whole family! ⁠

I really like making it home because I can put a lot of meat in it. Gyoza that I can eat at ramen shops tend to have less filling than homemade ones 👀 It was super juicy and filling. It was a perfect weekend meal for us👌

  • It feels somewhat tone deaf to continue gleefully posting about food when it feels like your home is burning. The truth is that revolution and change is challenging. We witnessed it tragically with Syria, and now people are rising up in the U.S. Brutality can come in varying degrees, but in all instances, the exertion of power is wrong. We must continue to fight for the oppressed and for true freedom for all.

2020 has been a difficult year for all of us. It's hard to feel grateful in the moment, but I've learned the importance of practicing gratitude in moments where we feel helpless.

I'm grateful for the health and safety of myself and my loved ones. I'm grateful for this platform to be able to give so many people a voice who otherwise wouldn't have it. I'm grateful for community, and I'm grateful for the sharing of creations, thoughts and ideas.

  • Kaya toast, half-boiled eggs, and curry puffs—before Asian Pacific American Heritage Month comes to a close, I’m sharing the three Malaysian classics that are the most reminiscent of my childhood. Together, they happen to make a delicious breakfast spread!⁣

Kaya is a coconut jam. I remember loving it when my relatives made kaya toast for breakfast and then being excited when my mom found it at the one Asian supermarket in my hometown. This is my first attempt at making it, using a shortcut version by @whattocooktoday. I didn’t have pandan leaves, so it didn’t quite taste like the kaya in my memory, but still tasted yum on buttery toast.⁣

Half-boiled eggs were the most common preparation of eggs in my childhood. I don’t think I realized until recently that Americans don’t eat eggs this way. Add eggs to boiling water then shut off the heat and leave them in for 8 mins. They’re like a humbler sous vide egg and are eaten with soy sauce and white pepper. Apparently kaya toast + half-boiled eggs + coffee are a typical kopitiam/Malaysian coffeeshop breakfast set but I don’t remember having one (probably cuz most of my visits to Malaysia were as a kid). So instead, I included a drink I do remember having a lot in Malaysia: Milo!⁣

Lastly, curry puffs are deep fried pastries filled with beef and potatoes in dry curry. This was my mom’s specialty; any time we got invited to a potluck or had a party, she would wow with her curry puffs. I cheated and used storebought puff pastry and a tortilla press (btw my pleating sucks) but my mom made pie dough for hers. Cutting cold butter into flour for her curry puff dough was one of the extremely few memories I have of helping my mom out in the kitchen—I had zero interest in cooking with my parents as a kid.⁣

Apparently kaya toast + half-boiled eggs + coffee are a typical kopitiam/Malaysian coffeeshop breakfast set but I don’t remember having one (probably cuz most of my visits to Malaysia were as a kid). So instead, I included a drink I do remember having a lot in Malaysia: Milo!⁣

    Lastly, curry puffs are deep fried pastries filled with beef and potatoes in dry curry. This was my mom’s specialty; any time we got invited to a potluck or had a party, she would wow with her curry puffs. I cheated and used storebought puff pastry and a tortilla press (btw my pleating sucks) but my mom made pie dough for hers. Cutting cold butter into flour for her curry puff dough was one of the extremely few memories I have of helping my mom out in the kitchen—I had zero interest in cooking with my parents as a kid.⁣

  • Fennel and garlic shrimp with grilled bread from Barefoot Contessa Foolproof by @inagarten. This simple and lovely appetizer is ready in minutes, and despite only having a couple of ingredients, it’s packed with flavor from the fennel and generous nine cloves of garlic.   • How do you like your avocado toast? My version today was topped with scrambled eggs with truffle oil, and sautéed spinach and mushrooms with fresh tarragon. All on top of sourdough from @simplybread! A very loose recipe for this is below... SCRAMBLED EGGS - serves one
Two eggs, splash of milk, salt, white pepper, butter, truffle oil
1. Beat the eggs, milk, salt, and white pepper well.
2. Melt about 1 tbsp of butter in a pan over medium-low heat.
3. Add the eggs and stir every time you see egg starting to set. The goal here is to form soft, moist, and creamy curds.
4. This process will take 5-6 minutes since you’re going low and slow. Remove the eggs from the heat while still wet.. the residual heat will continue cooking the eggs, and you definitely don’t want to overcook them.
5. Finish with about 1 tsp of truffle oil. Mix to combine.

SAUTÉED SPINACH AND MUSHROOMS
Half diced onion, 2 cloves minced garlic, generous handful of spinach, 4-5 sliced mushrooms, 1 tbsp chopped fresh tarragon, juice of half a lemon, 2 tbsp butter, olive oil, salt, pepper
1. Melt 1 tbsp butter and a bit of olive oil in a pan and add the onion and garlic. Cook 2-3 minutes until translucent.
2. Add the spinach and mushrooms and cook until the spinach is wilted.
3. Add the lemon juice, tarragon, and butter. 
The way I stack my avocado toast is:
1. Toasted, buttered bread
2. Eggs
3. Smashed avocado (don’t forget to sprinkle salt and pepper)
4. Sautéed spinach and mushrooms
5. Sprinkling of crumbled feta
