¿Ustedes qué comen los viernes por la noche? Por acá PIZZA siempre es nuestra primera opción!

Y hoy queríamos contarles de esta pizza que no es cualquier pizza (y no dejaba de escribir pizza, jajaja), es una muuuuuy famosa en la ciudad de Chicago y es una de las recetas protagónicas de nuestro nuevo libro COMIDA INTERNACIONAL VEGANA!

La característica principal es que con la masa se hace una especie de plato hondo y se rellena con muzzarella y un montón de cosas deliciosas. Nuestra muzzarella elegida fue la de maní que es una de las mejores muzzas del mundo, así que en las historias les dejamos el enlace!

  • Hey Beautiful People!! Despite the solemn mood of what's currently taking place throughout the country #restinpeaceGeorgeFloyd 😔🙏🏽❤, I wanted to spread my love for cooking something colorful. 😍

This is my version of Vegan-style homefries.  This is my new reality for comfort food when I am craving it.  To balance out the Yukon potatoes (With parsley, garlic, and sea salt), I added enough veggies to balance out this dish 😂😂. There's a little of grilled zucchini, squash, and some other good veggies that's hitting the spot.   • Been a bit MIA today but I've basically been cleaning, reading, sunbathing, running errands, having social distance (non- alcoholic) drinks with the neighbour and ate nuggets because sometimes you just need a tea like that😂😂 I've had a bit of a bad day food- wise and I think the only fruit and veg I've ate is a banana and that teeny corn on the cob but it's Friday and I'm going to forgive myself and move on😂 Happy weekend guys and gals💚

2. Get 6 to 9 hours of SLEEP each night. Sleep is crucial if you want to make progress, especially with fat loss and muscle gains. It helps regulate your hormones, which have a major impact on how your body responds, physically.⁠

3. EXERCISE daily. Before you go crazy with this, I'm NOT saying you need to do a workout everyday - that can overdo it! Move your body in some way every day. Go for a walk or do some stretching even on your rest days.⁠

4. Soak up some SUN! Getting out for fresh air and vitamin D is needed for your mindset and actually has health benefits so get off the couch and get outside.⁠

5. Eat more WHOLE FOODS to increase your fiber and vitamin/mineral consumption. Aim for whole foods over processed ones.⁠

6. Practice daily GRATITUDE. Remind yourself every day of what you're grateful for. Focusing on all of the positives in your life rather than the negatives will subconsciously make you take more actions to create more things to be grateful for.⁠

Lose focus and eat and drink whatever you want because “it’s the weekend”. Or,⁠

Maintain the attitude that I don’t “need” to use the weekend as an excuse to lose control.⁠

Here are my 6 tips to WIN the weekend every time⁠

Stick with your normal eating routine on the weekend. Saturday and Sunday are just another couple of days in the week - treat them the same. Can you enjoy something different to change things up - absolutely. Be mindful of whether you’re enjoying something or binging.⁠
⁠
Limit your alcohol and junk food consumption. This is an obvious one but can be easily forgotten. Having 3 or 4 pints of beer can easily add 600-800 calories to your day.⁠
⁠
Running errands or doing activities on the weekends? Make sure you pack healthy snacks to bring with you. This keeps you from heading to the store for “convenience”. Always plan ahead.⁠
⁠
Just like the previous one, prepare your meals in advance to save you time, money and headache. This also supports your progress.⁠
⁠
How do you want to feel on Monday? Like you had a weekend full of over-the-top drinking and eating, leaving you feeling upset with yourself and having to “start over”? Or, like you had a fun weekend while keeping control of things, leaving you feeling great as you head into the new week?⁠

  • celebratory spread!!!! finished my degree today so ordered from @cafethrivesouthampton + shared some bubbly ofc 💗

i didn't manage to get a decent pic of the actual food cos i was too busy enjoying it but swipe to see

a) the wholefoods burger (i doubled up the patties assuming they would be small and instead the burger was HUGE, so tasty and surprisingly 'meaty' given that it's lentil-based)

b) the giant cookie sandwich (filled with buttercream and sprinkles!!!! 🤩) handing everything in is such a relief but now i actually need to find purpose outside of education .. #vegan #vegantakeaway #vegantakeout #cafethrive #thrive #vegantreats #veganburger #vegancookies #vegandessert #veganfoodporn #veganinspiration #veganeats #plantbased #vegansouthampton

•200g basmati rice rinsed well •400ml coconut milk •200ml water
•1 tsp sea salt flakes

•2 courgettes sliced •1 fennel sliced •2 tbsp olive oil •Pinch sea salt
•Big handful Coriander
•Big handhul mint

FOR THE GOMASHIO:
•3 tbsp white Sesame seeds
•1 tbsp black sesame seeds
•Pinch sea salt flakes

FOR THE TOFU:
•1 block firm tofu sliced into large pieces •1 tbsp veg oil •Pinch sea salt

    INGREDIENTS

    FOR THE RICE:
    •200g basmati rice rinsed well •400ml coconut milk •200ml water
    •1 tsp sea salt flakes

  • ⚡️ Tofu veggie egg rolls ⚡️⁣

This was my first time making egg rolls, and I was over the moon with the results 😍 These were by no means authentic and I don’t have an exact recipe to share. Asian inspired food is probably my favorite to make at home, because it’s so simple to just follow your intuition and experiment. Trust your senses! You may end up making something amazing. You can always google and follow a recipe if you’d rather as well. ⁣

Below will be a rough recipe with no measurements. I’m sure there’s a million recipes you could find online, but I didn’t glance at a recipe first, and just through it all together. Looking back I would have doubled the veggies and made a 50:50 veggie tofu ratio, so I’m not going to list how much veg, bc that’s up to you. Ideally, the tofu and veg could all be chopped in a food processor to really speed things up and ensure small pieces, but mine broke. ⁣

Drain and press one block of tofu.⁣
⁣
Crumble up into very small pieces, but leave a bit of texture, think ground meat size or smaller.⁣
⁣
Grate carrots ⁣
Finely chop onion, mushrooms, and cabbage⁣
Mix with tofu ⁣
⁣
Make a basic marinade that consists of soy sauce, brown sugar, chili garlic paste (or siracha), garlic and onion powder, and ginger powder. Adjust to your personal preference. I made mine pretty sweet.⁣
⁣
Pour marinade over tofu veggie mixture.⁣
Stir fry in a very hot pan with a decent amount of oil. Cook until veggies are very soft.⁣
⁣
Drain and press out any remaining liquid.⁣
Toss in green onions.⁣
⁣
Watch a YouTube video of how to roll egg rolls.⁣
⁣
Take store bought vegan egg roll wrappers and use an ice cream scoop to get tofu filling into wrappers.⁣
⁣
Once you have them all rolled, spray or brush oil on top and bottom of egg rolls.⁣
⁣
Every air fryer is different, so keep an eye on them. I cooked mine at 375 for about 13-15 minutes. I set a timer for 8 minutes and then just kept checking on them. They may look a little funny as they cook bc they bubble up, but just keep cooking them until golden brown. I highly recommend letting them cool for about half an hour, because the texture of the wrappers drastically improve.

  • Vegan herb + cheese sourdough focaccia bread 🍞 I'll definitely be making this one again. If you have an active sourdough starter but you're not quite ready to make your first loaf, I highly recommend making this! I'm eating it as we speak with homemade cashew pesto lathered all over and I regret NOTHING. .

RECIPE: 
1/2 cup active starter, 1.75 cups lukewarm water, 2 tsp of salt. Mix this together with a wooden spoon until combined then gradually add in 4 cups of flour (I used one cup of whole wheat flour for flavor). Let the dough rest for 30 minutes then fold the sides in like an envelope 8 times. Let this dough rest again for 4-12 hours until it's doubled in size (you can put it in the fridge if it's too late by the time it doubles to stop the growth). Scrape the dough off the sides and deflate the mixture with wet hands to avoid sticking. Line a pan with olive oil and put your dough into the pan. Let it rest one last time for 3 hours in the pan. When it has risen again, drizzle 2 tbsp olive oil on top then spread evenly all over. Use your fingers to make dimples/holes in the dough. Cover with salt, thyme, rosemary, oregano, and nutritional yeast. Bake at 425 for 20 minutes! .

  • I found a recipe for vegan sour cream. It is made out of cashews, coconut milk, lemon, and dill. Does it taste like sour cream? Absolutely not! It taste like cashew cream. But it’s definitely tasty enough to go on everything that sour cream goes on. What I found is that other countries don’t try to make again alternatives two non-vegan foods and use the same name. Part of flavor and eating and taste is dependent on the mental expectation of the food. Just call it cashew dip! Not vegan sour cream!

Inventé esta receta porque nunca me gustaron las barritas de cereal del kiosco y por todos esos momentos en los que tengo que comer algo rápido. Aquí va:
• Base:
1/2 taza de almendras procesadas
3/4 taza de dátiles descarozados
5 cucharadas de aceite de coco sólido
Procesamos todos los ingredientes hasta que presionen y se una todo bien! Agregan unas cucharaditas más de aceite de ser necesario.
Ponemos de base (apretando bien y que quede todo unido) en un tupper rectangular y llevamos al freezer 1 hora.
• Topping:
Procesé maní hasta que se transformara en una pasta espesa y la exparcí sobre la base.
Corté rectángulos para cada barrita y listo!
Conservé las barritas ya terminadas en la heladera ♥️

  • Things are definitely feeling a bit nutty these days. 🤪 For those types of days I roll with it, making sure to give myself a point of self care and to also serve myself something yummy...usually always something involving noodles, tofu and peanut sauce for those particularly stressful days. 🥜

Bowl>>> Includes a serving of @lotusfoods moringa pad Thai noodles, broccoli, cabbage, onions and baked tofu. Coated everything in my peanut sauce and then drizzled some extra sauce overtop. 🥣

Peanut Sauce
3 tbsp natural peanut butter
2 tbsp low sodium soy sauce (opt for gluten free soy sauce or coconut aminos to make gluten free)
1 tbsp maple syrup
1 tsp sriracha
1 tsp mustard 
1/4 tsp garlic powder
1/4 tsp ginger powder
Juice of half a lime
2-3 tbsp water

Add all ingredients to a bowl and whisk together until smooth. Adjust consistency of sauce to your liking, by adding additional small amounts of water until achieved. 🥣

Baked Garlic Chili Tofu
1 block extra firm tofu drained and pressed for at least an hour
2 tbsp tamari
1 tbsp nutritional yeast
2 tsp chili garlic sauce
.
Set oven to 400F. After pressing tofu, cut tofu into even cubes and place in a bowl or Tupperware container. Add remaining ingredients, and if using a bowl just gently toss together. If using a tupperware container, seal container and gently shake contents to evenly coat tofu. Remove tofu and place on a lined baking sheet making sure tofu cubes aren’t touching. Place in oven for at least 25 minutes or until edges have browned. Remove from oven and serve as desired.

    Set oven to 400F. After pressing tofu, cut tofu into even cubes and place in a bowl or Tupperware container. Add remaining ingredients, and if using a bowl just gently toss together. If using a tupperware container, seal container and gently shake contents to evenly coat tofu. Remove tofu and place on a lined baking sheet making sure tofu cubes aren’t touching. Place in oven for at least 25 minutes or until edges have browned. Remove from oven and serve as desired.

I don’t say this lightly, after trying nearly every ranch out there, this really is the BEST VEGAN RANCH to me and it’s SO authentic, I guarantee nobody would know it’s not the dairy version. It even shocks some people. 🤣 The recipe LINK is in my profile.

  • NEW ON THE BLOG! Orange “chicken.” This recipe is sooo delicious and easy to make. I used soy curls for the chicken and I’m telling you they make all the difference. The texture is unreal. I get mine on Amazon.

  • I’ve been craving oats, and these oats always do it for me. 🥣 Wanted some warm and gooey so topped these oats with some caramelized banana slices. 🍌 You’ll also see some cacao nibs (you can swap with mini chocolate chips), blueberries and pepitas. 🍫

Vanilla Cardamom Oats
1/2 cup rolled oats
1 tbsp ground flax seed
1/2 tsp cinnamon
Pinch of ground cardamom
Pinch of nutmeg
1/2 tsp vanilla 
1 banana, sliced
1 cup almond milk 🌻

Add all ingredients to a sauce pan and bring to a simmer. Allow to cook for about 5 minutes to thicken and then remove from the stove top. 🥄
.
For the bananas, I sliced half a banana into 1/4 inch slices and place either on a greased pan or good quality non-stick pan and cook for about a minute on low-medium heat without touching. Then add 2 tsp maple syrup, 2 tsp of water, a pinch of cinnamon and pinch of salt. Flip banana slices carefully to cook on the other side for another 1-2 minutes. Top oats with cooked bananas. 🤤 .
