  • Shout out to @forksoverknives for this Baked Whole Cauliflower with Red Pepper Romesco and Pesto Bread Crumbs on pp 162-165 of their cookbook Forks Over Knives: Flavor! by @darshanas_kitchen.  I made it and it was very good y'all.  I especially enjoyed that Romesco sauce.  You can dip your fries in it.  You can spread it on toast.  I'm  sure there's better ways to eat it, but I am just getting started.  Bravo.  Delish!

5. and the secret-not-secret ingredient @simplynatural vegan "goddess" dressing! ( this dressing is simply the best for salad or as a dip it goes with anything!) Just mash toget everything but the endives,  and use the later as dipper (and/or craker🙃)! That is all, simply delicious and as easy as 123👏 8/10 ... Like I always say Eat what makes you happy"🤗🌱

Throwback to my last gym picture ⁣
⁣
and now another whole month without gym 🥺⁣
It’s crazy to think about my first session back at the gym. My goals definitely will be to focus on retraining my body form, and tempo. I want to walk in and smash out legs, but ya girls meniscus is on the verge of tearing 🥺🥺 (deserves a double sad face) ⁣
My doctor told me no lower body work..... which I have still been doing but listening to my body. I’m starting physical therapy and rehabilitation soon first to see if that will help, praying for no surgery!⁣

The gym for me was my outlet. I let all my worries and anxieties go and focused on me. Without it, I definitely feel those thing creep up a little more. That’s why I have found it so important to keep my body active and moving in different ways for some time each day.⁣
I have been really focusing on practicing yoga for a little bit everyday. I want to focus more on handstand practice, stretching my body, and being present with myself. Getting outside for walks or runs. Anything that gets me going and feeling good! ⁣

Now all of y’all who aren’t staying home, STAY YA ASS HOME. I’m trying to lift 😤

  • budget meals 🌱 no.2 - lentil ragu (i used puy lentils here) .

soo i’ve been going through my old recipes on this page and redoing and updating them. i never used to like lentils before but i made a lentil ragu in my first year of uni and was so surprised by how nice it is so i really recommend it - for those who haven’t tried its like a spaghetti bolognese but lentily !! .

i could only find puy lentils in my cupboards so i used them but they are more expensive than usual lentils. sub them out for a 400g can of cooked lentils or 200g of dried lentils and per serving the price will be below 90p!! .

ingredients (makes about 4/5 servings) - pasta
- 1 large red onion finely diced
- 3 garlic cloves minced
- 1 carrot finely diced
- 3 celery sticks finely diced
- 400g can of lentils/200g dried lentils
- 2x canned tomatoes
- 1l veg stock
- 1 heaped tbsp tomato purée
- splash of balsamic vinegar
- large splash of red wine (optional)
- 1.5 tbsp mixed dried herbs - 2 bay leaves - 1 heaped tsp smoked paprika
- fresh parsley/basil
- salt and pepper .

method
1. in a large saucepan with a tbsp of oil cook the onion until it softens
2. next add in the garlic, celery and carrot, bay leaves and cook them for a few more mins
3. add in the tomato purée, dried mixed herbs and balsamic vinegar and stir so everything is coated
4. add in the red wine if you’re using it and cook until the excess liquid has cooked off
5. now add in the canned tomatoes, lentils and then veg stock, i usually add about 500ml to begin and add more if i think it needs more - if you’re using dried lentils i’d use the full litre since they will absorb a lot of water
6. let this simmer for about half an hour until the sauce thickens
7. while the sauce is simmering, put the pasta on to cook
8. when the pasta is cooked, drain and add to it as much of the lentil sauce you need (the rest you can freeze for later if you’re not eating all 4 servings) 
9. stir through and cook on a low heat for a bit so the pasta is coated in the lentil ragu 
10. season with pepper and fresh parsley or basil

🍁 1 cup of hazelnuts. 🍁 1/2 cup of whole blanched almonds.
🍁 2 cups of medjool dates, pitted.
🍁 3/4 cup of cocao powder.
🍁 1/3 cup of rice malt syrup.
🍁 2 T of maple syrup. .

Vanilla layer:
🥛 2 cups of soaked cashews. .
🥛 1/4 cup of rice malt syrup.
🥛 1/2 cup of coconut cream.
🥛 3 T of almond milk.
🥛 1 tsp of vanilla powder

Chocolate cc.
🥥 2 cups of soaked cashews.
🥥 1/2 cup of cocao powder.
🥥 1 cup of coconut cream.
🥥 1/3 cup of rice malt syrup.
🥥 1/4 cup of almond milk.

Method:
Blend the brownie layer in a food processor. I would suggest doing the nuts first and press into a square pan lined with parchment. Pop into the fridge while you make the vanilla cream cheese layer.

Blend all the ingredients using a blender. Pour onto the brownie layer and keep in the freezer for a few hours or overnight. Add raspberries into the pan if you wish. .

    Method:
    Blend the brownie layer in a food processor. I would suggest doing the nuts first and press into a square pan lined with parchment. Pop into the fridge while you make the vanilla cream cheese layer.

    Blend all the ingredients using a blender. Pour onto the brownie layer and keep in the freezer for a few hours or overnight. Add raspberries into the pan if you wish. .

    Blend all the chocolate ingredients and pour on top. Freeze.

this is a super summery and fresh pasta dish plus a rlly good way to get some veg in. i made this sauce a few weeks ago when the only fresh herbs i had were chives in the fridge and i had a bunch of greens. i’m not usually a fan of plain boiled green veggies but i really like them with this cream cheese sauce! .

as for pricing this came to £1.34 per serving, based on Tesco prices (a mid price range supermarket for those not in the UK). cost of oil/salt/pepper etc wasn’t included. i did base the pricing on broccoli being used instead of asparagus (but i only had asparagus in the fridge and it does cost quite a bit more) but ofc you can use any veggies you like with this. the cream cheese is the most expensive ingredient, i based the price on half a tub of cream cheese but i actually used less than this. .

ingredients for 3 servings - about 250g tagliatelle
- 120g asparagus tips/broccoli, halved
- 2 large handfuls of frozen peas
- some green beans, halved
- 1/2 courgette finely sliced
- fresh chives finely chopped
- 1 tsp garlic powder
- 1 heaped tsp dijon mustard
- juice of a lemon
- olive oil
- 1 heaped tbsp vegan cream cheese
- salt and pepper .

method
1. i had 1/2 a courgette to use up so i chose to cut this into fine slices and roast them in the oven for 10 mins with a big drizzle of olive oil first 
2. cook the pasta in a large saucepan and for the last 5 mins of cooking time add in the rest of the veg
3. make the sauce, in a small bowl add the lemon juice, garlic powder, a tbsp olive oil, cream cheese, dijon mustard and chopped chives and whisk together with a fork
4. when the pasta is cooked, drain and add the sauce and roasted courgette slices to it and mix it all together
5. top with some black pepper, crushed chilli and more chives .

Chop up cauliflower into small to medium sized pieces (bite size but not too tiny either). wash and pat dry and set aside.
 in a bowl put together dry spices:
1 tsp of cumin.
1 tsp of onion powder
1/2 tsp of salt
1 tsp of garlic powder.
toss florets inside and toss within the bowl to coat.
add 1 cup of coconut milk and set aside to set for 10 - 15 minutes.
afterwards, turn your oven to bake and bake on 375 for 10 minutes and then broil for 2 minutes on low.

Meanwhile
dice up 1 onion and throw into a deep pan coated with olive oil or avocado oil. Cook on medium - low.
let it caramelize (until the onions are a soft brown) and throw in: 1/2 tsp of cumin, 1/2 tsp of turmeric, 1 tsp of coriander paste, 1 tsp of ginger and garlic paste, juice of half a lemon, 1/2 tsp of salt. Keep cooking until fragrant.
 Add 1.5 cans of coconut milk (full fat) and bring pan to a boil. add 1 can of tomato paste. Keep stirring and reduce heat to medium. Keep stirring until thickened. Add more salt, pepper or lemon juice if needed.  Stir in your cooked cauliflower and gently coat them with the sauce, turning your spoon in the batter to allow the florets to absorb and coated. 
Add some coriander leaves and chilies and naan and you've got an amazing meal!
