Ich hatte mal die Karamell + Meersalz Trinkschokolade von Koawach im Regal stehen sehen. Und natürlich eingepackt zum Testen... Vorgestern ist dann spontan dieses Rezept entstanden und für unfassbar lecker erklärt worden.

  • One of the things I love about being an adult is that if you feel like a certain food, you can just decide to make that certain food! This week I felt like burgers. Now i have burgers! 😍

I have had a crack at black bean burgers a few times, but I think I've finally found the perfect recipe! I traded out some eggs and feta for vegan alternatives, but they still turned out amazingly! Paired with some vegan cheese, spinach and red onion on a bun and it's a very delicious, very easy to reheat lunch as I'm working from home! .🌿.🌿.🌿.

You see not all foods are created equal. Foods assimilate and digest at different rates. And to make things more complicated some foods don’t combine well together.⠀

But by layering and combining the right foods you can maximise your digestion. And get more nutrition from your food. ⠀

It also helps prevent food fermentation and bacteria overgrowth.⠀

Here are a few key principles to follow: ⠀

This is the perfect snack to keep you satisfied between meals as it’s full of protein, healthy fats, fibre and micronutrients 🌈

These cookie dough balls would also be delicious crumbled and mixed in with yogurt or ice cream/gelato 😍

  • Roasted Balsamic, Chilli & Maple Glazed Brussels Sprouts with Pecans & Dried Cranberries

Recipe:⁣
- around 620g Brussels Sprouts, halved ⁣
- a couple handfuls pecan nuts⁣
- a Handful dried cranberries ⁣
- 3tbsp balsamic vinegar ⁣
- 2tbsp maple syrup⁣
- 1/2 tsp garlic granules - 1/2 tsp dried chilli flakes ⁣(how ever much you like)
- olive oil, for cooking⁣
- salt & pepper⁣
⁣
Method:⁣
1. Preheat the oven to 200C/180C fan/400F/gas mark. Line a large baking tray with non stick baking parchment.⁣
2. Add your sliced sprouts to the lined baking tray then drizzle with a little olive oil, rub the oil into the sprouts using your hands, then season with salt and pepper. ⁣
3. Roast in the oven for 10 mins until slightly soft.⁣
4. Meanwhile make the glaze by adding the balsamic vinegar, maple syrup, garlic granules chilli flakes to a small bowl of jug, then whisk everything together until combined. ⁣
5. Take out the sprouts, add the pecans & dried cranberries, then drizzle with the balsamic glaze. ⁣
6. Place back into the oven and cook for another 5-10 minutes, until the sprouts are roasted but soft. Enjoy! ⁣

  • Roasted Balsamic, Chilli & Maple Glazed Brussels Sprouts with Pecans & Dried Cranberries
    .
    Recipe:⁣
    - around 620g Brussels Sprouts, halved ⁣
    - a couple handfuls pecan nuts⁣
    - a Handful dried cranberries ⁣
    - 3tbsp balsamic vinegar ⁣
    - 2tbsp maple syrup⁣
    - 1/2 tsp garlic granules - 1/2 tsp dried chilli flakes ⁣(how ever much you like)
    - olive oil, for cooking⁣
    - salt & pepper⁣

    Method:⁣
    1. Preheat the oven to 200C/180C fan/400F/gas mark. Line a large baking tray with non stick baking parchment.⁣
    2. Add your sliced sprouts to the lined baking tray then drizzle with a little olive oil, rub the oil into the sprouts using your hands, then season with salt and pepper. ⁣
    3. Roast in the oven for 10 mins until slightly soft.⁣
    4. Meanwhile make the glaze by adding the balsamic vinegar, maple syrup, garlic granules chilli flakes to a small bowl of jug, then whisk everything together until combined. ⁣
    5. Take out the sprouts, add the pecans & dried cranberries, then drizzle with the balsamic glaze. ⁣
    6. Place back into the oven and cook for another 5-10 minutes, until the sprouts are roasted but soft. Enjoy! ⁣

  • Oh haaaaay 😚 June marks the anniversary of when a person called Sumear thought, "f*ck it", went rouge (and several breakdowns prior and after) and decided to make their own foodie business.

The last 12 months have been filled with many setbacks however there has been so much good and so much love from everyone that it has been amazing. I rather not bore anyone listing all the things that have happened. I mean I can, but I can't be bothered hah.

What I can tell you is the plan for the next 12 months.

Pretty much the current tiny kitchen has been exhausted and the "new" cheese cave built in Oct last year is already failing due to the summer heat we have. So time for a change!

Move to a bigger kitchen and hopefully a brand new sub-ground level cheese cave.

A cheese cave underground will make things so much easier and better for cheese. It's pure cheesemaker snobbery by being as traditional as possible, and I love it! Plus it helps to save the planet a bit more by using less power to get the right climate since it would be colder and damper compared to above ground.

A bigger, dedicated kitchen means eventual investment in larger equipment to develop more vegan cheese in the same time frame. More cheese = less of this out-of-stock & wait till 6 pm nonsense we have right now.

A bigger space also means that when the time is right, helping hands can come in and speed things up!

A dedicated workspace has the potential to finally being celiac friendly (I am very particular about this issue as didn't want to risk it in the current space with cross-contamination). So! This is the plan. A lot of money is needed for a project this size (I really mean a lot) and I have a history of prematurely making announcements which probably annoys a lot of you. But, there is no ETA's yet. Though, eyes have been laid on a potential space near Bristol centre and talks have been made 👀

Alle gut in die neue Woche gekommen? Für mich ist heute irgendwie Montag 🤪

Heute gab es einen gemischten Salat mit knusprig gerösteten Kichererbsen und Creme fraiche Dressing.
Das Dressing war der Knaller. Ich hatte dafür von Oatly Hafer Cuisine fraiche genommen und es war soo lecker 😋

Ihr braucht dafür:

2 EL Creme fraiche vegan
1 EL Olivenöl
1 EL Zitronensaft
1 EL Schnittlauch, gehackt
1 EL Ahornsirup oder andere Süße
Salz, Pfeffer

Einfach alles zusammenrühren, fertig 😋

So, ich zieh mir jetzt die neuen Folgen „Fuller House“ rein. Das muss ich, Töchterchen steht da voll drauf 😄
