  • Mushroom & Walnut Wonton soup🍜
This is a very easy soup that can be made with vegan frozen wontons and vegetable stock found in stores or it can be deliciously homemade with fresh ingredients

Wonton filling
1 cup mushroom
4 walnuts
1 teaspoon brown sugar
1 green onion
1/2 teaspoon of grated or minced ginger
1 clove garlic
1 tablespoon rice vinegar
2 teaspoons soy sauce
Vegan wonton wrappers
Finely chop all ingredients and mix. Leave 1 chopped green onion aside for soup topping. Make the wontons by taking one wonton wrapper, putting about 1 teaspoon of filling in the middle. Brush some water with your finger (or a food brush) around the edges of the wonton. Fold and slightly pressure edges. Give wontons any shape you would like.
Add to boiling water for 2-4 minutes and serve with soup

Homemade vegetable broth 🍲ingredients.
2 carrots
2 celery sticks
1 small yellow onion
3 green onions
3 bay leaves
1 tablespoon of dry thyme
8 sprigs fresh parsley
9 garlic cloves minced
1 teaspoon salt
1 tablespoon olive oil
9 cups water
Chop all vegetables in 1 inch chunks. Add olive oil to a soup pot (wider pot will work best) and cook vegetables for 5-10 minutes. Add water and salt and bring to boil. Lower heat and let it simmer for 30 minutes.

Tip: I added some soy beans (edamame beans) and spinach to soup

  • lunch today was a thiccc omelet stuffed w/ sautéed mushrooms, onions, spinach, ham, and lots of cheeeeese 🧀 ! then some @daveskillerbread avocado toast topped w/ @traderjoes everything but the bagel seasoning !! of course i had to arrange this plate like a smiley face bc happy food is so much more fun to eat 😄🤗🤪

  • Love this from @twospoons.ca Vegan Butter Chicken!🧡🌱 Made with baked tofu, simmered in a curried butter chicken sauce. This recipe is warm and comforting, creamy, smooth and buttery. For the tofu:
16 oz extra-firm tofu (450g)
2 tbsp neutral oil 
2 tbsp corn starch, or arrowroot powder
1 tsp sea salt, finely ground
1/2 tsp garlic powder
1/4 tsp pepper

For the sauce:
1 yellow onion, diced
3 cloves garlic, finely chopped
1 tbsp neutral oil 
1 can diced tomatoes (28 fl oz/795 ml)
1 tbsp tomato paste
1 tbsp fresh ginger, grated
1 tbsp garam masala
1 tsp chili powder
1 tsp curry powder
1 tsp ground cumin
1 tsp sea salt
1 can coconut milk (14 fl oz/400 ml)
1/2 tsp cayenne pepper flakes
1 tbsp maple syrup

1. Preheat oven to 400F/200C. Drain extra firm tofu and rinse well. Wrap in a tea towel and press tofu by wrapping in a clean tea towel and placing a few heavy books on top. Use your backsplash to secure books in place. Press for 10 minutes. Then unwrap tofu and cut into bite-sized cubes.
2. In a mixing bowl combine tofu, oil, corn starch, sea salt, garlic powder and pepper. Toss gently to combine. Line a baking tray with parchment and transfer tofu cubes onto tray spreading out so there aren't any clumps. Bake for 20-25 mins, or until golden and crispy.
3. Meanwhile add diced onions, garlic and neutral oil to a deep skillet. Bring to medium heat and cook until onion turns transluscent (about 10 mins).
4. Pour diced tomatoes, tomato paste and freshly grated ginger. Then season with garam masala, chili powder, curry powder, cumin, and sea salt. Add coconut milk and baked tofu and bring to a low simmer. Finally, add cayenne pepper flakes for heat, and maple syrup for sweetness.
5. Scoop vegan butter chicken over cooked rice, or serve with naan bread. Sprinkle with fresh coriander.

  • I love cooking as it takes all worries and thoughts away. Cooking comes naturally to me and I usually have lots of ideas. Vegetarian cooking is more difficult though, since I don't have as many ingredients and flavours to play with. Recently I did a cookbook haul, I literally was only looking through veggie options and made a list of new things to try. 
This was an Italian dinner that I made after a lovely walk in the park. Since we can't go to the restaurant due to corona, I try to re-create a restaurant experience at home. This was Aubergine Parmeggiana and Spinach and Ricotta macaroni with garlic. And a glass of red wine of course! 🍷🍝

  • This was my yesterday #dinner !! Wen i posted previous about the Dhal Paratha (@kamanabhaskaran thanks alot for the idea) & told u guys this is gonna be regular from now on.. Here again made Dosakaaya Pappu for Lunch and turned into Dosakaaya Pappu Paratha !! Super soft and Yummy 😋 .

  • I was so excited to get my first box of @mayascookiessandiego in the mail today!! I’ve heard many good things about this cookie brand so I just had to try them out. This is also black owned so I was even more excited to order. I did get the MotherLoad box to sample a bunch of different flavors and so far my fave is the s’mores. If you’re looking for some amazing chewy vegan cookies, this is the place!!

Нарядные тартинки с ярким, сырно-клубничным, вкусом можно приготовить не только в качестве праздничного завтрака: такую вкуснотищу захочется есть каждое утро.

Что нужно:

250 г слоеного бездрожжевого теста
200 г мягкого козьего сыра
100 г клубники
2 ст. л. сливочного масла
1 ст. л. меда
1 яйцо
соль, свежемолотый черный перец

Что делать:

1. Тесто нарежьте на 6 равных прямоугольников. Выложите на застеленный пергаментом противень. Наколите тесто вилкой.
2. Края смажьте желтком. Запекайте при 200 °С до румяной корочки, примерно 15 мин. Остудите.
3. Клубнику крупно нарежьте. В сковороде растопите масло с медом и солью. Увеличьте огонь до максимального, положите клубнику, обжарьте, 2 мин.
4. Намажьте тартинки сыром, на сыр выложите клубнику, полейте соусом из сковороды, поперчите и сразу подавайте.

  • CREMAS Y SOPAS ☁️ Empieza el frio y comienzan a salir las sopas en esta casa! Lo mejor es que podemos usar ese vegetal olvidado en el refrigerador, hacer infinitas combinaciones y con nuestro toque tenemos listo parte del almuerzo. A mi me gusta hacer más cantidad para dejar para la noche aunque sea una tacita o incluso podemos congelarlarlas para cuando tengamos menos tiempo de cocinar.

Esta la hice en base a papa, cebollín, kale, ajo y zapallo italiano. Si no tienen kale pueden reemplazar por otra hoja verde. Puse todos los ingredientes en la Miomat Pro @miomat_latam y listo!

BUENAS!  Viernes y día de ñoquis, más no podemos pedir!! 😆. Estos ñoquis son súper súper suaves..
.
PARA HACERLOS: 
1. Hervir la calabaza cortada en cubitos ( use 1/4 de una calabaza mediana:  rinde para 2 porciones) una vez hervida, le sacan todo el líquido, escurranlas bien. Luego la pisan con 100 grs de queso rallado, 3 cucharadas de ricotta, sal, pimienta, le puse un mix de condimentos y un huevo. Al Tun Tun le van agregan harina leudante. La masa tiene que quedar lisa, entre pegajosa y no. 
2. Hacen rollitos con la masa y cortan los ñoquis. Los colocan en agua hirviendo con sal y aceite. Una vez que suben a la superficie, esperan 2 min mas antes de sacarlos. 
PARA LA SALSA: Es una filetto. Puré de tomate, aceite, sal, pimienta y orégano. En el enplatado le coloqué unos hilos de crema. .

  • 🌷 Happy Friday 🌷 A couple of days ago Alex made the most delicious roasted red pepper and tomato soup 🥰 I’m usually not the biggest fan of smooth soup, especially not in this heat but this soup was actually delicious 😍 Full of comforting, warm and rich flavours and incredibly easy to make and to prepare in advance. We had it with some fresh French baguette and it was such a lovely meal to eat. We also added some of @francomancapizza chilli oil on top which gave it a nice kick and another layer of flavour 🤩 What is your favourite kind of soup? Let us know in the comments ❤️

  • CAVIAR D’AUBERGINE 🌿

Tu es plutôt caviar d’aubergine ou houmous ? Impossible de choisir entre les 2 pour ma part 🙈 Ce sont des petits plats idéals à faire pour l’apéro ou à manger comme snack avec des légumes crus 🌿

Ce que je préfère avec le caviar d’aubergine c’est son goût fumé grâce à la cuisson au four, miaaaam 🌿
▪️1 aubergine
▪️ 2 càs de tahini
▪️2 gousses d’ail
▪️1 càs d’huile d’olive
▪️1 càc de jus de citron
▪️1 càc de cumin
▪️1/2 càc de sel
▪️poivre
▪️1 poignée de persil pour la décoration

Instructions :
Préchauffez le four à 200 degré. Coupez l’aubergine en 2 sur la longueur, déposez les 2 moitiés sur une plaque face coupée vers le haut, arrosez d’huile d’olive et enfournez 40min.
Ajoutez l’ail épluché sur la plaque quand il reste 10min de cuisson.
Quand c’est cuit, laissez refroidir et récupérez la chair de l’aubergine avec une cuillère.
Placez la chair et tous les autres ingrédients dans un robot de cuisine et mixez légèrement (le caviar ne doit pas devenir trop liquide).
Servez dans un bol et décorez avec le persil.

Bon appétit 🌿

Mein Lieblings Pattyrezept. Schmeckt einfach richtig schön rauchig und passt perfekt auf n gut belegten Burger 😍🤗

🇩🇪Zutaten:
- 255g Kidneybohnen
- 250g Champignons
- 120g Haferflocken
- 50g Frühlingszwiebeln
- 165g Mais
- 2 EL Tahini
- 2 EL Stärke
- 2 EL BBQ Soße
- 2 EL Sojasoße
- 3 EL geschrotete Leinsamen
- 1 TL Knoblauchpulver
- Salz und Pfeffer
🛠️ Die Bohnen trockentupfenund zerstampfen, die Champignons kleinhacken, dann alle Zutaten vermengen und für ca 15 Minuten stehen lassen. Die Masse in Patties formen und für ca. 4-5 Minuten pro Seite mit etwas Öl stark anbraten. Danach für 20 Minuten bei 180°C im Ofen backen. Optional: mit veganem Käse vor dem backen belegen. 🌱
🇺🇸Ingredients:
- 255g Kidney Beans

- 165g Corn
- 2 tbsp Tahini
- 2 tbsp Starch
- 2 tbsp BBQ sauce
- 2 tbsp Soy sauce
- 3 tbsp shredded flax seeds
- 1 tsp garlic powder
- Salt and Pepper
🛠️ Pet the beans dry, then smash them. Shred the Champignons. Mix all the ingredients, then let the mixture sit for about 15 minutes. Form some patties, then fry them in some oil for about 4-5 minutes per side. Bake the fried patties for about 20 minutes at 180°C. Optional: put vegan cheese on top before baking.
